We designed this pairing of pastry and cr\u00e8me d'amande to bring out the flavor of the chestnuts layered on top. The star of the cake is the chestnut paste, which our p\u00e2tissiers carefully prepare in-house from chestnuts to make the most of their natural sweetness and aroma. We also add a layer of shibukawa-ni (chestnuts simmered with their inner skins on) as a textural accent, creating a contrast with the smooth chestnut paste.
