On top, we layer the rich aroma of coffee, deeply flavorful caramel, and an almond cream (d'amande) made with plenty of fully ripe bananas. We make the tart crust with care, focusing on the buttery flavor and crisp texture, and it enhances the flavors of the ingredients layered inside. We work ripe bananas into the almond cream to give it a moist texture and natural sweetness. The caramel is slightly bitter and deep in flavor, and it brings out the gentle sweetness of the banana and the toasty aroma of the almonds.
