The name does not mean that hazelnuts are added; it is associated with a pale brown color and an aroma like roasted nuts.

The browned butter is first cooled and then combined with the batter. In Callebaut’s recipe (recette: the proportions of ingredients and the method), egg whites are mixed into the dry ingredients to make a smooth paste, and the cooled butter is added last. After browning, the butter goes through a step of cooling to a temperature at which it will blend evenly. Substituting simply melted butter would change not only the aroma but also the amount of water that remains.

Two rectangular financiers (April 17, 2013, location unknown). Even when combined unwhipped with powdered sugar, almonds and flour, they set when heated and hold the batter in shape. The almonds add aroma, fat and fine solids. Although it contains no egg yolks, the formula is rich in butter and nuts.

How far the egg whites are whipped, and in what proportions the almonds and flour are used, vary according to the recipe and purpose.

Chilling, resting and baking for a contrast between surface and center

The prepared batter is chilled and rested, then poured into molds and baked. In one Callebaut example, the batter is chilled for 2 hours before being put into small financier molds. Small molds make it easy to combine a fragrant, browned exterior with a soft center.

The depth and material of the mold also change how heat is conducted. Even if the edges brown, the interior is not necessarily dried out to the same degree. When the baked batter is to be combined with fruit or cream, it is baked with the moisture of the fruit or cream, and how it will blend with their fat, also taken into account.

Chocolate financier (date and location unknown). In one presentation, caramel is loosened with hot cream and then emulsified with chocolate and butter into a cream that is placed in a separate glass, and the baked financiers are dipped into it to eat. Financiers are also used as small sweets for a café gourmand or for afternoon tea, and in a recipe that serves 2 per person, each bite pairs the browned exterior with the smoothness of the dark chocolate.

Among modern cakes scented with lime and built from layers of baked batter and cream, there is a financier that uses egg whites in two ways. The first portion of egg whites is combined with powdered sugar, almonds and flour; a small amount of this batter is mixed into the cooled browned butter, which is then returned to the rest of the batter. In addition, a separate portion of egg whites is whipped with sugar, and this is folded in last, taking care not to deflate the foam.

This batter is baked in a hemispherical mold and layered with a red fruit compote and whipped ganache. Unlike a small rectangular financier eaten as it is, here fruit and cream are layered on top of the baked batter to finish it as a single cake. It inherits the basic ingredients, while the added foam changes its lightness and its use.

The gold-bar origin story and the various molds recorded in pastry books

The name financier means a financier, that is, a person engaged in finance. According to one story, Lasne, a craftsman near the stock exchange, changed the visitandine, an almond sweet associated with nuns, into a gold-bar shape so that his busy customers could pick it up without soiling their fingers. This has been passed down as an origin story linking the name meaning financier to the gold-bar shape.

A pastry book from 1865 already lists both the masculine form, “financier,” and the feminine form, “financière.” Both are batters made by grinding and sifting almonds and sugar and combining them with egg whites, starch and melted butter. The former is put into flat, fluted molds and finished with a vanilla glaze. The latter is baked in small savarin molds whose central hole does not go all the way through, and in addition to the same glaze, an apricot is placed in the center. The same batter was thus made to look like different sweets through the choice of mold and finish.

Jules Gouffé’s 1873 “gâteau financier” is baked in a savarin mold. Pierre Lacam’s 1900 pastry book also describes a large financier with fruit made by Lasne of rue Saint-Denis, and mentions a “financière” that originated in Rennes in 1835. The rectangular gold bar is one of the shapes the name financier has taken, alongside these rings, fluted molds and large cakes decorated with fruit.

The flower-shaped visitandine of Nancy

The visitandine that appears in the legend is still made in Nancy today. The one made by Lefèvre-Lemoine is a soft, small, flower-shaped cake of almonds, sugar, flour, egg whites and butter, baked in traditional metal molds. Although its ingredients are close to those of the financier, it differs in its rounded outline when held in the hand.

The house states that in 1840 the Lefèvre brothers inherited the recipe from the baker Nicolas Bernard. Meanwhile, the story that it was a specialty of the nuns of the Order of the Visitation in Nancy survives as a tradition linked to the convent. The sweet that appears in the gold-bar origin story has been handed down elsewhere while keeping its flower shape.

Glossary

Beurre noisette: Browned butter, heated to give it a pale brown color and a toasty aroma.

Meringue: Egg whites and sugar whipped together.

Ganache: Chocolate emulsified with cream or other ingredients.
