Mille crêpe is a layered cake that developed in Japanese coffee shops and pastry shops and spread to New York and Asia. To make it soft enough for a fork to slide through cleanly, the thickness of the crêpes and the amount of cream spread on each are kept consistent. Mille means “thousand” in French and describes the many stacked layers. In one method, the eggs, sugar, salt and flour are first mixed into a smooth paste, which is then thinned with milk and melted butter, and the batter is refrigerated for at least 1 hour, preferably overnight, before cooking. Rather than being made to rise high like a sponge cake, each crêpe is cooked thinly, one at a time, taking care that it does not tear.

The temperatures of the milk and butter also affect how uniform the batter is. In a published recipe from the baking supply store cotta, half of the milk is warmed and combined with the dry ingredients, and then the whole eggs, the remaining milk and the melted butter are added. This step prevents the butter from solidifying in cold milk. After the batter has rested in the refrigerator, the flour that has settled to the bottom is mixed in again before cooking.

Once the cooked crêpes have cooled, cream is spread evenly on each one and they are stacked so that the cake does not lean. Spreading the cream thickly increases the proportion of cream to crêpe and also changes how the cake melts in the mouth. Some versions stack around 20 crêpes and others 30–40, and the height and texture of a slice are determined not only by the number of crêpes but also by the thickness of the crêpes and the cream.

Mille crêpe with layers of different colors (2024, location unknown). No changes to the content and no cropping were made for this use.

Preparing the cream and finishing the top

Some versions use whipped cream, custard-based pastry cream or a combination of the two, and some have fruit between the layers or are flavored with matcha or chocolate. For a white chocolate and vanilla ganache montée, gelatin softened in water is dissolved in warmed cream, which is then combined with the chocolate and emulsified. Plastic film is pressed directly onto the surface, and the mixture is chilled for at least 6 hours or overnight before it is whipped. Because the cream mixed with chocolate and gelatin is chilled thoroughly before whipping, this method differs from whipping only cold fresh cream.

The top may be left as plain crêpe, or it may be finished by dusting it with powdered sugar or by caramelizing sugar. The finish on top can add crunch and aroma to the soft layers. Whereas the laminated puff pastry of a mille-feuille shatters into thin flakes, crêpes stay supple and can be cut together with the cream.

Stacked and baked crêpe desserts in a 1907 cookbook

The idea of stacking existed before the modern Japanese products. The 1907 edition of Ali-Bab’s Gastronomie pratique includes two desserts in which thin crêpes are stacked in a mold. In one, crêpes made from a batter scented with orange blossom are layered with almond paste, then lemon cream is poured in and the dessert is baked. In the other, vanilla crêpes and vanilla cream are layered, and the dessert is returned to the oven to set the cream.

Although both stack crêpes, desserts that are baked again after stacking and today’s mille crêpe, which has cold cream between the layers and is chilled, use heat differently. The layered desserts in old cookbooks and the mille crêpe developed by shops in Japan differ in method in this way.

Development at Japanese pastry shops and spread to coffee shop chains

Shops that popularized mille crêpe in Japan include Ruelle de Doulière and Paper Moon in Tokyo. Paper Moon’s company history states that Emy Wada started a cake shop business in 1985 that expanded to various locations.

Toshinari Sekine is said to have created the mille crêpe in 1988, inspired by the layers of pasta and sauce in lasagna. This account of its development appears in a company history published in 2017 by the company he is affiliated with. He later moved to Paper Moon, where he was also involved in frozen shipping of finished cakes. Doutor’s official timeline records the release of its mille crêpe in 1996.

Mille crêpe, developed and produced at independent shops, eventually came to be sold at coffee shop chains as well.

Hand-cooked crêpes and frozen shipping take mille crêpe overseas

Around 2001, Emy Wada introduced it at Lady M in New York. The shop’s signature mille crêpe layers at least 20 hand-cooked crêpes with house-made cream, and the top is caramelized. For delivery to distant locations, the shop also flash-freezes finished cakes and ships them. The recipient thaws the cake in the refrigerator for 24 hours.

With frozen shipping that delivers finished cakes to distant places added to the skill of cooking crêpes one at a time, the mille crêpe that developed in Japan also spread to coffee shops and pastry shops overseas.

Glossary

Ali-Bab: Pen name of the French culinary writer Henri Babinski.
