Lemon cake is a general term for cakes that take a wide variety of shapes and flavors, depending on which parts of the lemon are used and how. The term covers Japan’s small lemon-shaped sponge cakes, loaves that are sliced, and cakes baked in a Bundt pan with a hole in the center. Whether the cakes are handed out one at a time or cut from one large cake affects the pan and the finish, and also which part of the cake carries the aroma.

An example of sliced lemon cake (2025, location unknown). One recipe (a formula of ingredients and method) for a loaf cake mixes the zest into the sugar, then combines eggs, cream, the dry ingredients and melted butter, in that order. Another recipe, for a Bundt cake, beats softened butter and sugar to incorporate air, adds the eggs one at a time, and then mixes in the flour alternately with milk. In the latter, the zest goes into the batter, and the juice is used in a glaze made separately. The two cakes share a lemon flavor, but they differ in whether air is first beaten into the fat.

Adding more juice increases the amount of liquid and the acidity as well as the aroma, so juice cannot simply be added in place of zest in the same way. Mixing the sugar and zest first and scattering the zest into the aerated butter are both ways of spreading the aroma of the zest throughout the batter.

Eggs, lemons, flour, butter and powdered sugar laid out as ingredients for a lemon cake (2011). If an icing of powdered sugar and juice is applied after the cake has cooled, that white layer does not serve the same purpose as the nearly clear syrup described above. The concentration and temperature affect how moisture enters the cake and where the acidity is tasted.

Another method is to melt a confectionery ingredient that contains fat and pour it over the surface. The lemon and yuzu cake presented by Valrhona has a yuzu-flavored finish. In Japan, Yamazaki Baking’s “Lemonack” is a lemon-shaped sponge cake coated with a lemon-flavored chocolate-type icing. Toppings that determine the firmness and aroma of the surface may also use ingredients other than the powdered sugar and juice of a simple white icing.

Lemon cake served at a shop in Brighton, UK (April 7, 2024). According to the company’s history, a customer asked its founder, Kinya Yoshida, for a lemon-shaped baking pan, and he made one through trial and error. A metal pan that bakes several cakes of the same shape at once is useful for shops that make batches of identical small cakes.

Why Shimagokoro in Setoda Does Not Use a Chocolate Coating

Ryuzo Okumoto opened his business in his hometown of Setoda in 2008 and started working on lemon cake the following year, 2009. His first main product was the roll cake he had learned to make in Kobe, but regular customers told him that it would not work as a souvenir unless he used local ingredients. The starting point for developing the cake was a used lemon-shaped pan that his mentor had given him.

At Shimagokoro, he believed that the sweetness of the conventional white chocolate hid the aroma, so he finished the cake without a chocolate coating. A jam made by simmering chopped peel is worked into the batter so that the cake keeps the aroma as well as the acidity. When he reworked a cake with a familiar shape into a local souvenir, he left out the usual chocolate coating to bring out the aroma of the lemon.

Bunmeido Sohonten’s Improvements After the Confectionery Exposition

Bunmeido Sohonten of Nagasaki received a strong response to a product made with Setouchi lemons at the 2013 confectionery exposition in Hiroshima. After that, the company reviewed its ingredients and released a new product in August 2019. Even when the outer shape is the same, the origin of the fruit, confectionery techniques and the demand for souvenirs to take home lead to differences in each shop’s formulation and finish.

Use as Offerings in Okinawa and the Choice of Citrus

In Okinawa, lemon cake is also used as an offering. In a 2025 company announcement, TRUNQ cited demand for cakes offered at Seimeisai (Shiimii) and Kyubon (Obon observed according to the lunar calendar) as background to a new product. Edelweiss Okinawa also describes its lemon cake as a cake for offerings at New Year, Kyubon and Seimeisai. Cakes offered at Shiimii, when people remember their ancestors around the time of Seimei, serve a different purpose from everyday snacks or souvenirs. Local makers produce lemon cakes that can also be used as offerings.

TRUNQ combines juice and marmalade from Setouchi with lemon chocolate. The cake that Edelweiss Okinawa sells in 2026 combines lemons with Hirami lemons grown in Okinawa Prefecture and is finished in-store. Cakes eaten at Okinawan observances use both local citrus and lemons grown outside the prefecture. Small cakes from different regions and the loaf and Bundt cakes made abroad do not all share the formulation of a single original version. Each uses zest and juice in different ways to suit the way people live.

Glossary

• Seimeisai (Shiimii): An Okinawan observance around the time of Seimei (Qingming) when people remember their ancestors through grave visits and other practices.
• Hirami lemon: The standard Japanese name for shikuwasa, a citrus fruit also used in Okinawan confectionery.
• Zest: The thinly grated, colored outer peel of citrus fruit.
• Bundt pan: A type of cake pan with a central tube and decorative ridges on its outer surface.
• Glaze: A sugar syrup or thin coating applied to cakes.
