Brittany’s kouign-amann is a pastry made by folding salted butter and sugar into a yeasted dough and baking it. Its name means “butter cake” in Breton. Layering butter and sugar between sheets of dough and baking it so that the outside and the inside have different textures relies on the bakery technique of lamination.

Folding salted butter and sugar into a yeasted dough

Unlike pie pastry, which uses no yeast, or cakes in which butter is worked evenly into the batter, kouign-amann layers sheets of butter and sugar into a dough that holds the gas bubbles of fermentation. Croissants are also made by laminating a yeasted dough, but in kouign-amann the placement and amount of the folded-in sugar, and the crust that forms during baking, are what give it its character.

The butter is brought to a firmness close to that of the dough and spread out, leaving a margin around the edges. If it is too hard, it tears the dough; if it is too soft, it runs. Sugar also draws in moisture, so how easy the dough is to handle changes with how long it is left. Keeping the folds and the thickness even is not simply for a tidy shape; it keeps fat and sugar from leaking unevenly through tears and causing uneven browning.

As it bakes, the butter melts, and the sugar that escapes to the outside colors and forms a hard crust on the bottom and edges. The inside is not dried out completely; soft layers that hold fat remain. Some recipes handed down locally (recettes, giving the proportions of ingredients and the method) call for removing the cake from the pan while it is still warm, before the sugar cools and sets in the pan. Because heat reaches the outside and the inside differently, a single slice has both a hard crust and a soft center that comes apart easily.

Pascal Jaïn’s three folds

Pascal Jaïn, a craftsman in Douarnenez, has published a recipe in which 175 grams each of salted butter and sugar are layered into a bread dough made with 150 grams of flour, 100 grams of water and other ingredients. In this formula, the butter and the sugar each outweigh the flour.

In this recipe, the dough is first rested in a cold place, then wrapped around the butter and sugar and folded three times in a row without refrigeration in between. It is placed in a round pan, scored in a diamond pattern, brushed with milk and baked. It is left to wait a little right after baking before being unmolded, so its timing is not exactly the same as that of the other recipe, which unmolds the cake while it is warm.

The 1860 improvisation story and the legend of a mistake

The Douarnenez origin story is set on a busy day in 1860. At the shop of the baker Yves-René Scordia, the pastries ran out, and to meet customers’ orders he is said to have improvised a pastry from the bread dough, butter and sugar he had on hand. As the story goes, baking it with lamination produced a pastry that was caramelized on the outside and held fat and sugar inside. It is a tale of the ingredients and techniques of a bakery turning into a local specialty.

The producer KerJeanne also relates other stories: that a young apprentice got the quantities wrong, or that butter and sugar were increased when flour was short. The improvisation at the shop, the apprentice’s mistake and the flour shortage are tellings that each place the pastry’s starting point in a different scene.

The legend of trade with Northern Europe

Another story holds that Douarnenez sailors who went to Northern Europe to buy fish roe used as bait for sardine fishing were served a sweet bread there and recreated it after returning home. In addition to KerJeanne, a 2006 public information magazine of the Côtes-d’Armor department also mentions a possible origin in trade with Norway.

The improvisation story and the trade story are different legends, each trying to explain how a single cake with butter and sugar folded into it became a local specialty.

Kouign-amann on display at a bakery in Trégastel, Brittany (source Exif dated December 29, 2007). In the 1856 census, his wife was also recorded as a baker. There is also a story that when the original starter was not ready in time for orders, they used a starter that rose faster. They are said to have adapted even the preparation of the fermentation starter to the time available for the work.

Its reputation spread through craftsmen who left the shop to work independently, people returning home and tourists, and in March 1967 it appeared as a craftsman’s pastry in “Bretagne Magazine.” Not only the single day that appears in the legend, but also the process of continuing to make it in the shop and of craftsmen passing on the method, have shaped the history of this pastry.

A pastry with butter kneaded in, handed down in Scaër

The local history of another town, Scaër, contains an account, passed on by the former pastry chef Henri Bridel, that the daughter of Henri Postic gave the recipe to Douarnenez. There are records of the daughter’s marriage, but the story that she passed on the recipe survives as local lore.

In the same research, Jacques Thorel talks about a pastry that was made in his wife’s family home. It is a dense pastry made by kneading the butter into the dough rather than folding it in. Although both bear the name kouign-amann, this family’s pastry and the one widely known today differ in whether the butter is kneaded in or folded in.

Kouign-amann from Douarnenez. By contrast, the small version that the pastry chef Georges Larnicol named the “Kouignette” is a laminated pastry that you can hold in your hand, one at a time. Between a large cake cut into slices and the small version, which has more outer edge and is caramelized on every surface, what changes is not only the quantity but also how much hard crust each bite contains.

King Arthur, an American baking education company, distinguishes between a recipe that recreates the large local pan and the small version, derived from croissant dough, seen in American shops. Dominique Ansel’s shop in New York sells the “DKA,” and Le Bihan in Japan also offers kouign-amann. Not every shop reproduces the large Douarnenez cake as it is; kouign-amann has become a pastry that craftsmen in many places sell after reworking its size and folding.

Kouign-amann sold at a bakery in Tokyo (June 22, 2020). It is an effort not only to pass on the origin stories but also to carry the name and the technique into the present.

The town’s 2025 amateur competition lists baker’s yeast, wheat flour, butter, sugar and other items as ingredients, and limits milk and eggs to coloring the surface. Participants have the opportunity to watch demonstrations by craftsmen at local shops, and the judging assesses not only appearance but also the layers in the cut surface, the flavor and the mouthfeel.
