Tocino de cielo is a Spanish dessert made by setting egg yolks with sugar syrup, cooling the mixture, and turning it out of the mold. It is also called tocinillo de cielo. “Tocino” means pork fatback, but no meat or fat is added; the name likens the dessert’s color and smooth, dense texture to fatback. de cielo means “of heaven,” so the full name means “heavenly fatback.”

An origin story: nuns using egg yolks left over at the wineries

In Jerez de la Frontera, there is a story that the dessert was born when egg whites were used to clarify wine and the leftover yolks were given to nuns. In this legend, tied to the Convent of Espíritu Santo, the white of each egg went to clarifying wine and the yolk to sweets.

Food culture researcher Manuel Torres reports that the 1837 inventory ledger of the González Byass winery records the purchase of 1,000 eggs a month. Purchase records alone cannot show when the yolks went to the convent or when the dessert came into being. In a wine town that uses many egg whites to clarify wine, a legend is told that links the leftover yolks to the convent’s sweets.

A milk-free formula combining egg yolks with syrup

The basic ingredients are egg yolks, sugar, and water. Although it looks like a flan, in which eggs are thinned with milk, this dessert brings out the rich flavor of egg yolk. There are recipes (ingredient proportions and methods) that use only yolks, and others that add a little egg white or whole eggs. In Dr. Oetker’s example, 10 egg yolks are combined with 1 egg white, and a syrup made from 290 grams of sugar and 90 milliliters of water is added. Unlike recipes that use the same number of whole eggs, this is a yolk-centered formula.

The syrup of sugar and water boiled together serves to sweeten the yolk mixture. The caramel placed in the bottom of the mold is made by browning a separate portion of sugar. Dr. Oetker’s recipe also includes vanilla, and there is also a way of finishing the dessert with a fruit sauce or raspberries alongside. Although the basic approach of combining yolks and syrup without adding milk is shared, the aromas and presentation vary.

Mixing and the water bath for a dense cut surface

The way the syrup is handled also varies. The recipe from the Spanish tourism board adds syrup cooked to the thread stage to the yolks little by little, strains the mixture, and pours it into a caramel-lined mold. Teresa Márquez Jiménez, a cook in Jerez, describes cooling the syrup before combining it with the yolks. Other recipes pour in hot syrup little by little, and the temperature at which the syrup is combined differs from method to method.

The procedure from the culinary school in Leioa explicitly states that the mixture should be mixed only enough to make it uniform, without creating foam. This is so that no air bubbles remain in the mixture and it sets with a fine, dense texture. In this school’s method, a thin layer of glucose rather than caramel is used in the bottom of the mold. When clear glucose is used, the surface does not take on the amber color it gets with caramel.

In addition to setting the mixture in a water bath in the oven, the Royal Spanish Academy of Gastronomy describes cooking it gently in a water bath in a pot, with the lid wrapped in a cloth. In either case, the mixture is set by baking or steaming, then cooled and allowed to settle before being unmolded. When a rectangular mold is used, the dessert is cut into small squares; when individual molds are used, it is finished as single servings.

<img decoding="async" src="https://ezb966kqson.exactdn.com/cms/wp-content/uploads/sweetlore-photos-20261028/600a8cd20f864952623c75e4f0ecebd0d470b5947b24331cf8835bb4a51a1417.jpg?strip=all&quality=90&webp=92&avif=55&w=1920" alt="Tocino de cielo displayed at a pastry shop in Madrid. The municipality lists them as a local food alongside the local cheese and bread, and notes that the town has businesses supplying them to restaurants across the country. The milk-free egg-yolk dessert is not confined to the wine country of the south; it has also become a specialty of a northern town.

In Jerez, too, artisans and residents carry on the dessert today. In February 2026, the news agency EFE covered an event at which local pastry makers made about 7,000 of them, and the proceeds from sales were directed to support for young people. A dessert with an old legend also plays a part in the town’s present-day activities.

<img decoding="async" src="https://ezb966kqson.exactdn.com/cms/wp-content/uploads/sweetlore-photos-20261028/2809367065dea09f174cc5e6f2ea2c9317064fd5236f28b40dedab9ae7bd5c12.jpg?strip=all&quality=90&webp=92&avif=55&w=1920" alt="Tocino de cielo served with fino ice cream.
