Some recipes (ingredient proportions and method) also add eggs. After the first rise, the dough is divided into equal pieces, shaped into balls, and left to rest once more. Because the dough keeps rising in the pot, the balls are arranged with room to expand between them.

Some versions put milk, sugar, and butter in the pot, while others use water and butter. The well-risen dough is placed gently into the warm liquid. Bavarian home cooking also has recipes that cook the dough in water.

Dough arranged before cooking. While liquid remains, the surface does not dry out easily, and the top rises while staying pale. Once the liquid has reduced, the fat and heat at the bottom of the pot brown the underside, giving it color and aroma.

The defining feature is that steaming and frying follow one another in the same pot. When a crust forms on the bottom depends on the amount of liquid, the width of the pot, and the heat. The lid is not opened repeatedly during cooking; at the end, the dough is left to steam briefly, and the lid is removed so that the water droplets collected on it do not fall onto the dough.

The finished Dampfnudeln can also be served with the bottom crust facing up. A single piece offers both the softness of the white dough soaked with sauce and the crisp texture of the side browned on the bottom of the pot.

Sweet sauces and meals paired with a salty crust

In Bavaria, the typical version is sweet and served with vanilla or fruit sauce. In the Palatinate, by contrast, the dough is cooked with water, oil, and salt to create a salty crust on the bottom. The dough itself may contain milk, eggs, butter, and a little sugar, and the saltiness comes mainly from the finish on the bottom of the pot.

A salty bottom crust does not mean that the accompaniments are savory. Dampfnudeln are also paired with a sweet wine sauce, made by thickening white wine and sugar and combining it with egg yolks or whipped egg whites, and with vanilla sauce. In the Palatinate, they are eaten as a main dish and also at coffee time, and they are sometimes sold at bakeries. When served as a main course, the meal may begin with potato or vegetable soup, followed by Dampfnudeln with a sweet vanilla or wine sauce. Within one continuous meal, the diner moves from a savory soup to a sweet dough dish.

When served with meat dishes such as goulash or pork stew, they are placed on the same plate and eaten with a knife and fork. Regional differences appear not only in the bottom crust and sauce, but also in which dish they follow and what they are eaten with.

A shop in the Baumburger Tower in Regensburg. 1990s, Túrelio (photo source / CC BY-SA 3.0 DE)

A household practice: soaking leftovers in egg mixture and baking them the next day

Some households turn leftover Dampfnudeln into a sweet dish the next day. According to a 2017 account by Mittsi, who lives in Bavaria, the household of Mittsi’s husband’s aunt made plain unfilled Dampfnudeln as well as ones filled with stewed apples. Those that were not finished were sliced, soaked in a mixture of eggs, cream, and sugar, baked, and sprinkled with cinnamon sugar. It is a way to enjoy the steam-braised dough dish the next day with a different texture, soaked in egg mixture.

A name derived from steam and dumplings, and early recipes

Dampf means steam. Nudel now usually refers to noodles, but in the past the word was also related to Knödel, meaning dumpling, and this dish is round as well.

Friederike Luise Löffler’s “Neues Kochbuch” (1791) contains several recipes using egg yolks, milk, butter, and yeast, and also has a heading “Bavarian style.” By the late 18th century, recipes bearing regional names appeared in cookbooks, and they were carried on into the 19th century.

The legend of a village saved with 1286 Dampfnudeln

In Freckenfeld in the Palatinate, there is a gate with reliefs representing 1286 Dampfnudeln. It commemorates a legend that, during the Thirty Years’ War, Swedish cavalry came to the village and demanded money, threatening to plunder the village if it was not paid.

According to the legend, the villagers were allowed to provide a hearty meal instead of money, and the baker Muck and the villagers prepared wine sauce and Dampfnudeln, serving 1286 of them until the soldiers were full. This story of a village averting a crisis with food is presented as a legend by tourism organizations as well.

How it differs from filled Germknödel

The related Germknödel is also a round dough leavened with yeast. In the classic Viennese recipe, it is filled with a thick plum paste called powidl, cooked by boiling or steaming, and topped with melted butter, poppy seeds, and powdered sugar.

Unlike this sweet dumpling filled with powidl, Dampfnudeln are mostly unfilled, and the sauce is chosen with the salty bottom crust in mind. Even with similar yeast doughs, the flavor and the way of eating change depending on whether they are filled and which dishes or sauces accompany them.

Glossary

Freckenfeld / Muck: A village in the Palatinate and the baker who appears in the legend of the village’s rescue.
