It was named after the surname of the confectioner Dobos C. József. So that cutting the hard caramel does not crush the soft layers beneath, the lid is cut separately before it fully sets. Five are stacked with cream, and the remaining one becomes the caramel lid. Rather than slicing one thick sponge into many tiers, each layer is baked as a thin disc from the start, so every surface carries a baked aroma.

The batter is made by whipping the egg yolks and egg whites separately. Part of the sugar is whipped with the yolks, and lukewarm melted butter is mixed in briefly. Separately, the whites are whipped with the remaining sugar and combined, and flour is added a little at a time. Because continuing to mix butter into the yolks for a long time tends to reduce the volume, it is important to distribute the fat while preserving the foam.

The batter is spread thinly and evenly on a baking sheet and baked; a blade is run under each baked layer, and a round ring is used to even out its shape. Making the thickness and diameter uniform also makes the stripes in the cross-section even when the layers are stacked with cream.

A cream made from egg foam and three cocoa ingredients

The cream is based on whole eggs and sugar heated while stirring, then removed from the heat and whipped until cool. Meanwhile, butter is whipped with vanilla sugar, and melted dark chocolate, cocoa mass and cocoa butter are mixed in. The cooled egg base is poured into this in a thin stream and blended until smooth.

Cocoa mass adds a deep cocoa flavor, and cocoa butter adds fat. Compared with mixing only chocolate into butter, this allows the cocoa solids and fat to be combined separately. With the addition of the foam made by heating the eggs, the result is a cream that has a deep chocolate flavor yet is easy to spread thinly and stack.

Dobos torta from the Napfényes confectionery in Budapest (April 1, 2017). For the sixth layer, which goes on top, sugar is melted until no crystals remain, and once it turns golden brown it is poured over the layer and spread.

Because caramel hardens as it cools, it is cut into about 16 to 20 pieces before it fully sets. The cut lid pieces are placed on top of the chilled cake. Cutting the lid in advance allows the cake to be served one slice at a time without crushing the soft cream below. Some finishes also coat the sides with chocolate cream and draw lines with a comb-like tool.

Making the sponge and cream nearly equal in thickness is a specification also found in the Hungarian Food Codex. The golden lid, the tender crumb of the sponge and the smooth cream come together in every single slice.

Dobos torta displayed at Demel in Vienna. 2023, Geolina163 (photo source / CC BY-SA 4.0)

The 1885 exhibition and its introduction to other places

Dobos sold it at his own shop in 1884 and presented the confection at the 1885 Budapest National Exhibition. Compared with the heavy confections of the time, which were layered many times with cooked cream and elaborately decorated, the combination of thin layers, a light chocolate cream and a flat caramel surface was a novel one. The national cultural heritage presentation also highlights this difference as the novelty of 1884. The anecdote that Franz Joseph I and Empress Elisabeth also tasted it survives in the national “Hungarikum” presentation.

There is also a legend about the buttercream: an apprentice mistook powdered sugar for salt and put it into the butter, and the master tasted it and improved it. This, too, is a legend about the cake’s invention that appears in the official presentation.

Dobos introduced the confection in various parts of Europe and shipped it to distant places in specially made wooden boxes with ice. Protecting its shape with packaging and keeping it chilled, he delivered the confection, with its layers and hard lid, to various cities. The 1896 Millennium Exhibition had a “Dobos Pavilion,” and the National Heritage Institute records that the confection was served there. Both the shop and the exhibitions spread its name and appearance.

Faced with imitations, handing the recipe to fellow tradespeople

Upon his retirement in 1906, Dobos handed the recipe to the Budapest guild of confectioners and honey-cake makers. The Hungarikum presentation gives the circulation of many poor-quality imitations as the reason for making it public. According to this account, he shared the correct method with his fellow tradespeople to maintain the confection’s quality.

Its composition and appearance were later also set down in the Food Codex. Even as it spread from one shop’s secret to a confection also made by others in the trade, its distinctive appearance, with soft layers covered by a golden lid, has been handed down along with its name.

A plate at Gerbeaud in Budapest.
