In one method, unsweetened condensed milk (evaporated milk) and sweetened condensed milk are reduced over low heat while stirring, taken off the heat, combined with egg yolks and vanilla, and then heated again. This is a recipe (the proportions of ingredients and the method) introduced by Peru’s tourism agency; in contrast to methods that reduce milk and sugar, it uses two kinds of concentrated dairy products.

Adding egg yolks thickens the reduced milk further. No baked flour-based layer is used; the cream is poured into the vessel and left to cool. In the pot, it must be stirred constantly so that it does not scorch, but once it is in the glass it needs to be thick enough to keep its layered form until it is scooped with a spoon.

Meringue Made with Port Wine Syrup

The meringue on top is made by cooking sugar and port wine into a syrup and gradually adding it to whipped egg whites. The sweet wine is not added to the milk layer below; instead, it goes into the syrup that sweetens and stabilizes the egg-white foam. In the lower layer, milk and sugar are reduced and egg yolks are added; in the upper layer, syrup is added to whipped egg whites. The contrast between the two layers comes from this difference in handling.

The milk cream is put into a glass, the meringue is layered on top, and cinnamon is dusted over it at the end. In some versions, the meringue is piped from a pastry bag fitted with a tip to decorate the top. In a small glass, both layers can be seen through the clear sides, and how rich it tastes changes depending on how much foam and cream go into each spoonful.

An example of a presentation at a restaurant in Washington, D.C. 2018, Sarah Stierch (Missvain) (photo source / CC BY 4.0)

The Name Manjar Blanco and How Its Ingredients Changed

The name of the lower layer, manjar blanco, means “white food” in Spanish. In this dessert, it refers to a sweet cream of reduced milk, but the menjar blanc that reached colonial Lima included versions containing chicken breast and rice flour as well as versions made without chicken, using sugar and rice flour. Rice flour is an ingredient for thickening liquids, which differs from the method used today for the lower layer of suspiro, in which condensed milk is reduced and thickened with egg yolks.

The Legend of a Sigh Named by a Poet

The Spanish name means “sigh of a woman from Lima.” According to legend, the poet José Gálvez Barrenechea tasted a sweet made by his wife, Amparo Ayarza, and named it by comparing its sweetness and softness to a woman’s sigh. This naming legend is still told when the dessert is introduced today.

Gálvez was born in 1885, and the couple married in 1913. This couple’s naming story belongs to a different period from the origin theory that places the dessert in the early 19th century. Some accounts date it to the early 20th century, and the time when the milk dessert came into being and the time when it received the poetic name of a sigh are not necessarily the same.

A counter displaying Peruvian desserts (November 2, 2007; location unknown). It also appears at food events in the historic center held for the city’s anniversary celebrations.

It has also become a subject for teaching Peruvian sweets abroad. In July 2024, at a course in Caracas organized by the Embassy of Peru and a university culinary school, pastry specialist Pamela Plasencia taught how to make it, along with encanelado, a cinnamon sweet.
