The surface of the thick custard takes on dark, mottled browning. Versions with a thin crust are typical, but there are also crustless versions, and how the name flan parisien is used in distinction from it is not consistent. Heating it twice, in the pan and in the oven, resting it before baking, and cooling it thoroughly after baking give it a firmness that allows it to be sold by the slice.

Thickening in a pan, then baking in the oven

The filling is typically made with milk or cream, eggs, sugar, starch and other ingredients, and flavored with vanilla. Warm milk is gradually added to the egg and flour mixture, which is then returned to the pan and brought to a boil while stirring to make a strongly thickened cream. The added starch gives the soft milk-and-egg filling a firmness that allows it to be sliced.

There are methods that use only cornstarch, methods that combine it with wheat flour, and methods that use cream powders containing several starches and flavorings. Whether egg yolks or whole eggs are mainly used, and how much cream is added to the milk, also change the color, richness and the way it melts in the mouth. Its method of setting the filling differs from that of soft puddings that are set mainly with eggs and no starch.

Vanilla transfers its aroma to the milk and scatters fine seeds across the cut surface. So that every part of the thick layer is equally fragrant, it is important to infuse the milk thoroughly.

Resting the cream before baking, too

In one method, the cooked cream is poured into a pastry-lined mold and rested before baking. Letting the air incorporated during preparation settle reduces excessive bubbling up during baking and overflow from the mold. There is also a method in which the cream is first chilled before being poured into the mold.

The timing for adding fresh cream also varies. In recettes (ingredient proportions and methods) in which a cream of milk, eggs, sugar and starch is cooked in a pan and fresh cream is mixed in after it thickens, the mixture is poured into the mold while hot, and the whole is cooled before going into the oven.

Baking and cooling a thin crust and thick cream

For the base, pâte brisée, laminated pastry and other doughs are used. In some methods, the dough is lined into the mold and filled as is; in others, it is first blind-baked with weights, then filled and baked again. These variations serve to bake the thick cream while also cooking the crust thoroughly.

In the oven, the top surface exposed to the air loses moisture and browns, while the center keeps a pale color and softness. Because the inside is soft just after baking, the flan is cooled thoroughly before being unmolded and sliced. Resting before baking settles the air in the cream, and cooling after baking firms the filling enough to be sliced.

Atsushi Endo of Confect Concept in Tokyo makes a flan parisien that he conceived while making gâteau basque. In this example, a crisp base is layered with a mixture of almond cream and custard, then with more custard, and scented with rum. The pairing of a thin crust and a thick filling also reflects the maker’s own ingenuity.

At Paquemonte, a specialty shop in Tokyo, there is also a style in which multi-layered pastry for the sides and a salted brisée base are baked separately and assembled, and the flan mixture is then poured in and baked further. It is the shop’s own method of matching the crisp sides and the saltiness of the base with the soft filling.

Chocolate flan with no eggs in the filling

For chocolate flan, some recettes bring milk, fresh cream, sugar and starch to a boil, combine them with chocolate, and use no eggs in the filling. Because the fat and solids of the chocolate are also added, this differs from simply adding flavor to a vanilla formula. If a chocolate sablé pastry is blind-baked, filled, chilled and then baked again, cacao flavor is layered in both the crust and the cream.

Flan parisien from a Los Angeles shop, showing thick cream and a thin base pastry. On the other hand, some pastry explanations strictly distinguish the crustless version as flan pâtissier and the version with a crust as flan parisien. The names used by shops and recettes vary, and even under the same name, whether there is a crust can differ.

In Pierre Lacam’s 1900 pastry book, the fine “flan crème” uses milk, eggs, egg yolks, sugar, wheat flour and crushed macarons. There was also a recette for an ordinary version that reduced the eggs and sugar and supplemented the milk with water. The book also records that flans were flavored with vanilla or orange flower water and, in working-class districts, baked large and sold by the slice.

The pastry maker’s work of varying proportions and prices to make both a luxurious whole flan and an everyday slice carries over to today’s shop counters. A thin crust surrounds the thick cream, which keeps its shape when sliced yet melts softly in the mouth.

A slice of flan pâtissier placed on its packaging (March 18, 2025; location unknown). A requirement was that the flan be made without adding any flavoring other than vanilla. Precisely because this dessert has few eye-catching decorations, each pastry maker’s work shows in the browning, the cut surface and the way it melts in the mouth.

Pastry chefs at work at a separate flan pâtissier competition held in Lyon (April 19, 2026, Place Antonin-Poncet).
