It is popular from the Pyrénées-Orientales in France across to Catalonia on the Spanish side. Besides the southern French form, which wraps custard and is dusted with powdered sugar, there are versions with whipped cream or finished with scorched egg yolk, and some are also made with chestnuts. Fillings and finishes vary by region.

Baked to Stay Soft Enough to Roll

The base is a soft biscuit made with egg foam. In a recette (the proportions of ingredients and the method) in which egg yolks and sugar are mixed, flour is added, and separately whipped egg whites are combined in, air is incorporated into the batter as it is spread on a baking sheet in an even thickness. Because it is thin, it is baked for a shorter time than a thick cake.

It is important not to over-dry it, even at the edges, and to leave it flexible enough to bend. Turning the baked sheet out onto a damp cloth makes it possible to roll it up using the cloth as support. Spreading the cream evenly over the surface of the sheet, rather than piling it thickly in one spot, keeps the filling from squeezing out during rolling and also keeps the layers neat.

Separate Flavors for the Custard and the Sponge

The typical filling is custard, made by heating milk, eggs, sugar, and flour or starch. It is flavored with vanilla, and some versions add lemon zest or rum. In a method where the sponge is soaked with Grand Marnier and left to rest briefly before vanilla cream is spread on it, the orange liqueur creates the flavor of the sponge.

Versions filled with crème catalane have also been presented. Even within the same rolled sweet, depending on the choice of cream, different aromas are layered onto the flavors of milk and egg.

A rolled sweet published as a Catalan braç de gitano (December 12, 2011, location unknown). It may also be filled with cream or chocolate truffle, so it is not limited to the single custard filling of southern France. In one artisan’s method, an egg-yolk cream is spread over the surface and scorched, adding a sheen and bitterness unlike the whiteness of powdered sugar.

A Rolled Sweet on Sunday and Holiday Tables

In Catalonia, there is a custom of buying from pastry shops, for Sundays and everyday celebrations, a sweet of thin sponge rolled around cream, whipped cream or truffle. In the second half of the 20th century, it spread to weekend tables as an accessible sweet. In 2025, the pastry guilds of Barcelona, Girona, Lleida and Tarragona selected this rolled sweet as an emblematic dessert of the region. In southern France, too, the bras de Vénus is recorded as a sweet eaten on family celebration days.

The cream-filled braç de gitano is also listed among the sweets for February 5, Saint Agatha’s Day, in Catalonia. This day honors the patron saint of women and bell ringers, and customs are also recorded in which women dressed as men and spent the day with bonfires, dancing and bells. The rolled sweet appears not only at weekend pastry shops but also on the tables of a feast day on which women take center stage.

In 2012, in the Catalan village of Els Arcs, about 30 women gathered for a dinner celebrating Saint Agatha and shared braç de gitano along with coca and pizza. After the meal, they headed off to the village dance. The feast day is February 5, but this village’s dinner was held on Saturday the 11th of the same month. The sweet is not limited to ritual food eaten on the exact date; it is also a dish shared at gatherings of women.

A brazo de gitano in Les Cases, Alcanar, Catalonia (February 18, 2025). In El Soleràs, Catalonia, it was customary to prepare two braç de gitano for the All Saints’ Day auction of donated goods (Encant): one was auctioned, and the other was given at the end as a raffle prize. Ramon Espuña Turmo, who served as the auction’s caller for more than 20 years, recalls that the money raised was used for the upkeep of the church and for oil for the sanctuary lamp. Bidders in separate places competing against one another and buying the sweet for more than its usual price also served as a donation to the community.

In Cantavieja, in Aragon, Spain, too, rolled sweets, tarts and everyday goods are put up at an auction called the “tranza” during the Saint Agatha festival. At this event, items brought in by residents are auctioned aloud in the arcade of the square after Mass, and the proceeds go toward the festival’s expenses. Besides being sliced and shared at women’s dinners, the rolled sweet is also used to raise funds for festivals through auctions.

Lightening Chestnut Cream for Rolling

Methods using chestnuts include combining chestnut paste with custard or whipped cream. Chestnut cream is mixed into a custard made by cooking egg yolks, milk, flour and starch, and the mixture is cooled. Whipped cream is then folded in to make a crème diplomate, a lightened custard, which produces a soft filling while keeping the chestnut flavor.

In this method, the sponge is lightly soaked with syrup before the chestnut cream is spread on it. The syrup that moistens the sponge and the light cream spread inside are made separately and combined, and the roll is finished with powdered sugar and chestnut cream. The thin, soft sponge and the cream with its rich chestnut flavor can be enjoyed together.

The Origins of the Names “Arm of Venus” and “Gitano’s Arm”

The French bras de Vénus means “arm of Venus,” and the Catalan braç de gitano means “Gitano’s arm.”

Regarding the latter, the Catalan pastry guilds present a tradition that in 19th-century Barcelona, a Gitano craftsman who repaired copper pots received offcuts from a pastry shop, rolled them up and carried them on his arm. Food culture historian Marta Manzanares points out that although a connection between pastry shops and coppersmiths is natural in itself, there is not enough historical evidence to attribute the origin of the name to that incident.

Another tradition tells that a nun who traveled to Egypt came across this rolled sweet and brought it back to Spain, where it was at first called “Egyptian’s arm” (braç egipcià), a name that later changed into “Gitano’s arm.” It is a story that explains the sweet’s spread and renaming from an older name, but neither the nun’s name nor the time of her journey has been passed down.

A 1908 Barcelona satirical magazine carried an exchange in which a child begs their father for a “Gitano’s arm,” and the father refuses because he dislikes the Gitano of the name. It shows that by the early 20th century the sweet’s name was familiar enough to be understood in everyday conversation in the city, while it was also an expression that made a joke out of prejudice against the Roma.

A 1915 short story features a woman who, every Sunday around the Santa Caterina Market in Barcelona, offers a tortell or a braç de gitano as a raffle prize. Not only the everyday act of buying sweets to take home but even the pleasure of waiting to win had become a scene in literature.

Glossary

Biscuit: A baked batter that makes use of egg foam.
