Cantabria’s sobao pasiego is a rectangular baked sweet made with plenty of butter. What survives in the name “sobao” is a motion from old-time breadmaking: kneading the dough. On the way to today’s cake, it changed from a sweet made by kneading sugar and butter into bread dough to one made by mixing flour in directly.

An Etymology in Kneading Bread Dough, and Three Stages of Change

While pasiego refers to a place, sobao is a name tied to the Spanish verb sobar, the act of working and kneading dough by hand. The municipality of Vega de Pas describes the early sweet as bread dough kneaded with sugar and butter and then baked, and explains that the name derives from the repeated act of “kneading.” Regional food-culture research also records a process in which bread dough was first kneaded vigorously, then divided and lightly kneaded again. The name conveys this old work better than it describes the appearance of today’s soft cake.

In the municipality’s account, there are three stages: at first, sugar and butter were added to bread dough; next, eggs, lemon, and anise liqueur or rum also came to be added; and in modern times, bread dough was no longer used and the batter came to be made starting from wheat flour. Today’s dense, soft sweet is made by this last method.

A Recollection That Eusebia Refined It in a Sanatorium Kitchen

The refinement of replacing bread dough with flour is attributed to the cook Eusebia Hernández Martín. According to a later letter from her son, cited by García Lomas, who documented the language and life of Cantabria, his mother took inspiration from the old bread-dough sobao and began making it with flour around 1896, around the time she married Joaquín Lazo. The Vega de Pas municipality’s account of its history places this in the kitchen of Dr. Madrazo’s sanatorium. The method changed from kneading fermented bread dough to combining flour with butter and eggs.

Dairy Farming in the Pas Region and a Butter-Rich Batter

Pasiego is a word associated with the Pas region of Cantabria. The valley landscape, shaped by pastures and farmhouses, is also tied to a dairy food culture. The same region also has quesada: sobao uses butter and eggs, while quesada uses curds. Both use dairy products, but in different ways.

In the basic recipe (the ingredient proportions and method), the main ingredients are butter, wheat flour, sugar and eggs. Butter, flour and sugar are used in roughly equal proportions, and butter, which comes from milk, is the main fat. The aroma of milk fat overlays the yellow batter made with plenty of eggs. There is also room to add small amounts of sugars, salt and the like.

When mixing, the butter and sugar are first beaten until smooth and creamy, then the eggs are added, and finally the flour and leavening agent. Because it is mixed so as not to incorporate too much air, it bakes into a crumb that is dense yet soft, rather than a light sponge with large holes. Both the formulation and the mixing method contribute to this dense, soft texture.

Pastures in the Pas Valley (1987). Because the paper keeps the batter from spreading sideways, each becomes a portable single serving without having to be unmolded from a metal pan one by one.

Sizes range from small to large. Baking temperature and time are also adjusted according to the quantity and the type of oven. After baking, the cakes are cooled thoroughly before packaging, to prevent water droplets from forming inside if they were wrapped while still warm.

A 1946 record of the regional vocabulary describes sobao as a sweet made from flour, eggs, sugar and butter and baked in specially folded paper, and as a gift a bride gives to her friends on her wedding day. The paper not only kept the batter’s shape during baking but also served as the wrapping for handing over each piece.

This case is traditionally called gorro, meaning “hat,” and is characterized by folds that flare out on both sides. Along with the browned surface and the yellow crumb, the opening paper wings are part of what makes this sweet recognizable.

Sobaos baked in paper molds, stacked with the molds still on. It is a system for linking the land with the method and passing them on.

A single sobao eaten at breakfast or during a break has the richness of milk and eggs even without added cream.
