When it is cut, layer after layer of pale biscuit appears within the dark chocolate. Although it is simply stacked in alternating layers in a long, narrow mold, the cut surface and the way it melts in the mouth change depending on the fats used as ingredients and on whether air is whipped in. Its curious name, “cold dog,” comes with an explanation that links the box shape to a mine cart.

A Kalter Hund partway through assembly (June 2006, location unknown). Biscuits that do not fit the width of the mold are broken and fitted into the gaps so that the thinly spread brown layer is not interrupted. The liquid mixture cools and sets around the already-baked biscuits, and the whole becomes firm enough to slice. There is no step in which a batter itself is baked in the oven.

Dr. Oetker’s recipe (ingredient proportions and method) combines two kinds of chocolate, milk and dark, with coconut fat and cream. Other methods use butter, cocoa, sugar, eggs and so on. The proportion of chocolate and the type of fat change both the firmness when cold and how quickly it melts in the mouth. Coconut fat sets at room temperature and absorbs heat as it melts in the mouth, so it also leaves a cool impression on the tongue.

It is chilled in the mold for several hours until it can be cut without the layers falling apart. Today it is chilled in a refrigerator, but in the past it was carried down to a cool cellar, and it was also called “Kellerkuchen” (cellar cake). When a thickly layered cake is cut into thin slices, you bite through layer after layer of firmer biscuit and smoothly melting parts in succession. Following the stripes of the cross-section, the flavors and textures of biscuit and chocolate alternate.

<img decoding="async" src="https://ezb966kqson.exactdn.com/cms/wp-content/uploads/sweetlore-photos-20261028/d63eed74b4406404aecd65e4e32eaf96e5f55bb116c5a9854dd92897962ad13c.jpg?strip=all&quality=90&webp=92&avif=55&w=1920" alt="Cross-section of a Kalter Hund made with layered speculoos. It is an example of a manufacturer showing how to turn store-bought biscuits into a different confection at home.

In Rosemarie Schreuer’s recollection of Berlin in 1947, her mother goes to great trouble to obtain cocoa, coconut fat and Leibniz biscuits for Christmas. Although it is an easy confection made by layering ingredients, in a time of scarcity gathering those ingredients was itself a special preparation for the celebration. The confection is recorded as a Christmas memory of that family. Its later spread to households can also be seen in a fat manufacturer’s advertising: in a 1958 four-color advertisement, Palmin showed this cake together with its product.

Hideko Kawachi, who writes about Berlin’s food culture, noted in 2025 that Kalter Hund, known as a nostalgic snack of the former East Germany, has begun to appear in cafés in the West as well. A confection that carries family memories is now also showing up on café menus.

The theory linking the name “cold dog” to a mine cart

Kalter Hund literally means “cold dog.” Meanwhile, the coconut fat manufacturer Palmin explains the name by likening the long box shape to the mine cart Hunt and connecting it with chilling to set. The language researcher Elke Donalies also discusses the way Hunt is reinterpreted as the familiar Hund as an example of the reinterpretation of a word’s meaning.

The alternative name Kalte Schnauze means “cold snout” or “cold mouth.” It does not mean a confection in the shape of a dog. The explanation is that Hunt, referring to a box-shaped cart, was reinterpreted as the familiar word Hund and combined with a word expressing coldness, but who first gave it the name is not known.

Swiss Schitterbiig and Cypriot Doukissa

Switzerland’s Schitterbiig and Cyprus’s Doukissa are also made by a similar method of chilling ready-made biscuits until set.

The Mocca-Schitterbiig from the Swiss food media outlet FOOBY combines butter whipped with powdered sugar, melted chocolate, coffee liqueur and whipped cream. After Petit Beurre biscuits are layered and chilled, the top is covered with the reserved cream and dusted with cocoa. Unlike a mixture that is simply melted and set, this one contains an aerated, coffee-flavored cream.

Kathrin Runge, who shares a recipe she learned in Cyprus, also has a method in which the biscuits are broken up, mixed in, and the result is cut into squares. Whether the biscuits are arranged in neat layers or scattered as irregular pieces changes the appearance of the cut surface, even among confections chilled and set in the same way.

Glossary

• Hideko Kawachi: A writer who reports on German food culture from Berlin.

• Coconut fat: Fat obtained from the endosperm of the coconut.
