Faloodeh Shirazi from Shiraz is especially well known. The noodles are mixed into ice scented with rose water, and the dessert is served with lime or lemon juice or sour cherry syrup. Unlike smooth ice cream, it keeps the texture of ice crystals and cold, thin noodles, and this gives the dessert its character.

Combining Starch Noodles with Ice

The noodles are not the thin wheat noodles used in cooking with sugar simply added. In the traditional method, starch is heated with water, and the resulting sticky dough is pressed through a tool with holes to form thin strands. The strands are dropped into cold water to set, so the noodles keep their shape and texture even in syrup. The noodles are then combined with a cold syrup that contains sugar and rose water.

For home cooks today, there is also a method that uses rice vermicelli. This recipe (the proportions of ingredients and the method) saves the work of pressing thin noodles from scratch. The cooked noodles are cooled in cold water, cut short, added to the syrup and frozen. Distinguishing the home method with rice noodles from the artisan process of making noodles from starch also helps avoid conflicting explanations such as “faloodeh noodles are always made from rice flour” or “always made from cornstarch.”

When it is made in a home freezer, one method is to stir it with a fork or a similar utensil partway through freezing to break up the solid parts. This keeps the whole mixture from freezing into a single block of ice, so that coarse ice crystals and noodles stay mixed together. The aim is different from that of ice cream making, which seeks smoothness. Even after the ice melts in the mouth, the texture of the short noodles remains.

Faloodeh and ice cream served at a shop in Dubai (December 1, 2013). In faloodeh, sugar provides the sweetness and rose water provides the aroma. Citrus juice added when the dessert is eaten gives acidity to the sweet syrup. Sour cherry syrup adds not only acidity but also the red color of the fruit.

Faloodeh is sometimes served together with bastani sonnati, an Iranian ice cream flavored with saffron and other ingredients. In this pairing, a smooth frozen dessert made with dairy is eaten together with a cold dessert based on ice and noodles. Dairy is not essential to faloodeh itself.

Faloodeh and accompaniments on a table at the same shop (Dubai, December 1, 2013). After it is drained, sugar syrup and rose water are added. In the Shiraz style, the whole syrup is frozen to a sherbet-like consistency. In the Yazd style, by contrast, bits of starch and short noodles float in a cold liquid. Basil or other seeds are sometimes added, and there is a custom of eating it by drinking it from the bowl. In 2023, the Yazd method was registered as intangible cultural heritage within Iran. This national system is separate from international World Heritage listing.

In Kerman, there is a form of faloodeh in which pearl-like pieces of starch, rather than long noodles, are combined with ice and sweet syrup. Hossein Masarrat, a researcher of Yazd culture, visited Kerman and in a 2023 travelogue described the Kerman version as granular rather than noodle-like, and similar to the old “pearl faloodeh” of Yazd. Even with the same starch, the way it is eaten differs between the Shiraz version, with long thin noodles to chew, and versions in which the pieces are scooped out of a liquid.

Faloodeh with visible white ice and thin noodles (October 9, 2008; location unknown). In winter, ice was formed little by little in shallow pools, and when it had grown thick, it was cut and carried to the storehouse. In some villages, the ice house was run communally, and there were also celebrations when it was filled with ice in winter and when it was opened in summer. Storing ice was part of the work of the town that supported the making of cold sweets. Mechanical cooling equipment came into wide use only from the mid-20th century onward.

Faloodeh is also called paludeh (pālūda / pālūdeh, پالوده). The Persian verb paludan means “to clarify, to clean,” and paludeh has the meaning “clarified, refined.” Dehkhoda’s dictionary lists faloodeh as a variant form of paludeh.

The paludeh entry in the same dictionary lists both a sweet made from honey, almonds and starch, and a food in which cooked starch is formed into thin threads, dropped into snow or ice, and combined with sugar or other ingredients. The old name covered a broader range than today’s half-frozen noodle dessert. Records of an almond paste sweet cannot be read directly as a recipe for today’s cold dessert or as evidence of when it originated.

Falooda of South Asia is also a related dessert that shares the name and the thin noodles. However, a drink made by layering milk, basil seeds, ice cream and other ingredients is assembled differently in the glass from the Shiraz cold dessert, which combines noodles with a half-frozen syrup. Uses of the old name alone are not enough to trace, in chronological order, a single line of change from today’s Shiraz frozen dessert to South Asia’s milk-based drink.

<img decoding="async" src="https://ezb966kqson.exactdn.com/cms/wp-content/uploads/2026/10/sweetlore-20261026-figure-4566c3a42698a207.webp?strip=all&quality=90&webp=92&avif=55&w=1920" alt="Faloodeh in which the thin noodles keep their shape.
