A wheat-flour dough is wrapped around a sweet filling of date syrup, sugar and spices. A pattern is pressed into the surface with a mesh or tool, and the sweet is baked until brown.

Besides fillings made from kneaded date flesh, some versions use date syrup. Some combine date syrup, sugar, cardamom, cinnamon, dried lime, ginger and other ingredients, making a richly sweet filling fragrant with spices. Fillings vary from household to household and from shop to shop. Some use date paste, nuts or coconut, and some products include toffee or similar ingredients.

<img decoding="async" src="https://ezb966kqson.exactdn.com/cms/wp-content/uploads/sweetlore-photos-20261028/fbfa869648222c2dd688736cb42e8889a25591bc21b45ca1b3623d59854d75a9.jpg?strip=all&quality=90&webp=92&avif=55&w=1920" alt="Kleija baked with a lattice pattern. The flour and fat are mixed, then water is added to make a soft dough, which is divided into portions and wrapped around the filling. Some versions use milk or ghee, some use animal fat, and some methods ferment the dough. The formulation differs from product to product.

The date syrup used in the filling is also called dibs. A filling made with this syrup is different from a filling of whole date flesh. Because thick, cooked-down syrup is combined with sugar and spices, the filling also looks different when cut from that of cookies filled with date flesh. Loomi, or dried lime, adds not only citrus sourness but also the distinctive aroma of dried lime. The aroma of loomi is sealed inside the dough together with the sweet aromas of cardamom and cinnamon.

After the filling is wrapped, a pattern is pressed into the top and the kleija is baked. A Saudi description includes a step in which the dough is pressed against a mesh to transfer a pattern to the surface. The pattern is not decoration added after baking. It is made while the dough is still soft. As a result, a regular pattern remains on the round dough wrapped around the spiced filling.

A kleija broken in half (2011, location unknown). Its aims include not only introducing the sweet itself but also giving more sales opportunities to people who make food and handicrafts at home. The festival helps preserve home recipes and skills, and it also lets people sell their products and turn these skills into work.

Records show that 217 households producing food and other goods at home took part in the 15th festival in 2024. Each household takes part with its own methods, and many makers, not only certain well-known shops, keep the local flavor alive. In the same year, kleija was selected as the representative dish of Qassim in an initiative introducing Saudi Arabia’s food culture region by region.

Buraydah joined the UNESCO Creative Cities Network in the field of gastronomy in 2021. The UNESCO Creative Cities Network is a framework in which cities cooperate through their food culture, including production, sales, home-based work and local culture. This does not mean that the method of making kleija itself has been designated as World Heritage. Besides its disc shape and spice blends, the work of home makers who sell at the festival is also part of what this sweet is today.

Sweets with Similar Names and the Kleija of Qassim

Iraq also has a baked sweet called kleicha, which is filled with dates or nuts. Iraqi kleicha comes in half-moon, rolled and other shapes, and it is known as a sweet that families make in large batches for festivals. The two have similar names and both wrap a filling in dough, but they are not identical in every respect, such as Qassim’s disc shape and its filling of date syrup and spices.

For comparison: Iraqi kleicha. Kleija is characterized not only by its surface pattern but also by its combination of local wheat flour and fats, thick syrup and dried lime.

Left: a disc with marks pressed into its surface.
