Fine striations appear on a cut face, and in the mouth it crumbles as if thin layers were coming apart. It carries the deep aroma and the fat of sesame, yet unlike a smooth paste, it has a dry, brittle texture.

The name halva is used across a wide region for many different sweet foods. Some are made by toasting wheat flour and adding syrup, some use semolina, and some are made by working starch until it develops a translucent elasticity. The clue to identifying tahini halva is not the name alone but the fact that its main ingredient is sesame paste. It differs in both shape and texture from the starch-based halwa of Oman.

Not simply a paste set as it is

Tahini is a paste made by grinding sesame seeds. In making halva, a syrup is prepared separately by boiling sugar and water. A known method adds acid to the syrup and uses an extract of a plant root that helps it foam. The soapwort extract used in Turkish production research is one example. After the syrup has been whipped until white, it is mixed with tahini, kneaded while still warm, packed into molds and cooled.

In this process, the sesame paste, concentrated sugar and air do not blend into a uniform liquid. A fine structure in which the sugar portion is combined with sesame-derived solids and fat creates the halva’s characteristic way of coming apart. The order of mixing and the way of kneading matter not only to distribute the ingredients evenly but also to create, at the same time, a form that can be cut and a texture that crumbles.

Because it contains a lot of fat, oil may seep to the surface during storage. Food research has examined ways to suppress this oil separation and to stabilize appearance and texture. The presence of sesame oil is not in itself a flaw in the confection, but how well the solid structure retains the oil affects how easy the product is to handle.

Tahini halva with light and dark stripes (February 15, 2026; location unknown). It cannot be asserted that a confection made by toasting flour and one made by working sesame derive from the same single dish of the past. The history of the name, which continues from the medieval period, and the history of the modern confection made by working sesame paste need to be considered separately.

In Iran, a sesame-based confection is called halwā arda; it is sweetened with sugar or molasses, and versions with added nuts are also made. The sesame halva made widely in Turkey and Greece is one member of this large halva family.

In Ermenek, Turkey, pekmez, a concentrated grape juice, is used in place of sugar. In this style, dried grapes are soaked in water to obtain a liquid, which is boiled down and then combined with root extract and tahini. It was once a food for people working in fields and orchards during the cold season, eaten with breads called bazlama and yufka. Today it is eaten regardless of season, and it is also served to guests at weddings and celebrations and given as a gift. Among sesame halvas, too, there are styles that use sugar syrup and styles that use local grapes.

Tahin helva displayed at a food shop in Eskişehir (February 3, 2015). A plain base dotted with nuts and one streaked with the color of cocoa differ not only in aroma but also in their cut faces. In Eastern Europe, sunflower seeds, which were readily available in the region, became an ingredient for a halva distinct from the sesame kind. This is an example of a confection that kept the method of turning seeds into a paste and combining it with a sugar structure, while changing into a sweet with a different flavor to suit local crops.

In Egypt it is also a familiar sweet eaten tucked into bread. Beyond being eaten from a small plate as a confection, it is tucked into children’s packed lunches and bread at home, and is eaten as part of everyday life. For modern home cooks, a method has also been devised that combines tahini with powdered sugar and milk powder and rolls the mixture into balls without using heat. However, this is a recipe (the proportions of ingredients and the method) that omits the factory whipping and kneading steps; even if it aims for the same flavor, it does not have the same brittleness as a traditional block.

<img decoding="async" src="https://ezb966kqson.exactdn.com/cms/wp-content/uploads/2026/10/sweetlore-20261026-figure-5e43881f85e83921.webp?strip=all&quality=90&webp=92&avif=55&w=1920" alt="Tahini halva with pistachios.
