Dates arranged to fill a plate are covered with a brown flour mixture, and cinnamon or pistachios decorate the surface. Although it may look like a baked cake, it is not a confection that rises in the oven. It is a confection enjoyed for the combination of the soft flesh of the dates, the walnuts inside them and the fragrant flour around them.

Stuffing dates with walnuts and layering toasted flour

Dates are the fruit of the date palm. A well-known way of making ranginak is to remove the pits and put walnuts in the space. Rather than mashing the flesh into a uniform paste, keeping the shape of the fruit means that soft flesh and hard nuts overlap within a single piece. When a date is cut, the nut stuffed inside the flesh appears.

The wheat flour is toasted in a pan until it colors. In methods that heat it together with fat, the flour is kept constantly moving and the heat is turned off when it turns golden. There is no step of adding water and kneading it like a pastry dough, then baking it afterward. Because the flour is heated first, the flour layer itself is finished in a ready-to-eat state.

In recipes (the proportions of ingredients and the method) that spread toasted flour on the bottom, arrange the walnut-stuffed dates on it and cover them with the remaining flour, the fruit is sandwiched from above and below. In another method, a layer of flour is poured over the arranged dates. When the order of the layers differs, whether the flesh shows on the surface or stays inside the flour when a portion is taken from the plate also changes. The cut pieces are shaped into diamonds, but it is not a confection that must always have the same thickness or shape.

In a recipe by cook Roxana Begum, walnut-stuffed dates are arranged on a plate without gaps, and a layer of hot flour and butter is poured over them and pressed down. Powdered sugar, cinnamon, cardamom and fine pistachio pieces are then layered on top, and it is left overnight before being cut. Instead of being baked to set, the tightly packed fruit and the settled layer of fat create a form that can be cut and served.

Differences in nuts and spices

While dates alone are sweet, some methods also add powdered sugar to the toasted flour. Ranginak therefore cannot uniformly be called a “confection with no added sugar.” Cinnamon may be sprinkled on the surface or mixed into the flour, and some versions add cardamom. The nuts are not limited to walnuts; pistachios are used as decoration or as an ingredient.

Because the flour layer, the fruit and the nuts are not all made fine and uniform but are layered with distinct roles, what you taste changes depending on where you are as you eat. The fine pistachio on the surface adds color and aroma, while the walnut inside the date keeps a firm bite within the soft flesh. Although both are nuts, they do not play the same role.

Ranginak photographed in Abpakhsh, southern Iran (April 21, 2022). It is also known as a sweet of Shiraz, but it is not a confection confined to a single city. The use of dates, flour and fat is shared, but the nuts, decoration and presentation vary.

In Mohr, in southern Fars Province, some households eat ranginak at Nowruz, the spring New Year, and on Yalda, the night of the winter solstice. This is recorded in a survey of the city’s food culture as a link between the seasons and this date confection.

Some modern methods keep the basic approach of stuffing dates with nuts and layering toasted flour while changing the ingredients. Israeli cook Rinat Tzadok makes a ranginak in which dates are stuffed with three kinds of nuts and covered with a layer of spelt flour heated with cocoa butter and olive oil. This is not a standard formula for all of southern Iran but one modern cook’s method. The structure of nut-stuffed dates layered with heated flour remains even when the ingredients change.

An old record of dates stuffed with nuts

“Khosrow and the Page,” a Middle Persian text depicting the Sasanian court, mentions a food of dates from Hira, in what is now central Iraq, stuffed with walnuts. It is an old description of putting nuts in dates, but when the present-day ranginak with layered toasted flour came into being, and whether the two are directly connected, is unknown.

Whereas masghati, also from southern Iran, is made by working starch and water into a single unified mass, in ranginak the shape of the fruit remains at the center of the confection. Iran also has another sweet in which dates are mashed and kneaded into toasted flour, and its structure differs from that of ranginak, in which the whole fruits are arranged in layers. In contrast to confections shaped by boiling down syrup, in ranginak it is how the dates are arranged and how they are layered with toasted flour that determines its appearance on the plate.

<img decoding="async" src="https://ezb966kqson.exactdn.com/cms/wp-content/uploads/2026/10/sweetlore-20261026-figure-7bcedb61fc73fbb3.webp?strip=all&quality=90&webp=92&avif=55&w=1920" alt="An example of how ranginak is presented.
