It is mixed into the flour, sugar, yeast and cardamom, and the dough is left to rest and rise. The aroma of coconut and spice spreads throughout the dough.

The recipe (the proportions of ingredients and the method of preparation) featured in the Smithsonian’s 2014 Kenya program also uses coconut milk and yeast, and the dough is left to rise in a warm place before shaping. Dough that has risen while resting puffs up further in the oil.

A blade grinder used to separate cardamom seeds from their pods (2009, location unknown). A single disc yields four triangles. When the risen dough is fried, it puffs up, forming a browned surface on the outside and an airy interior.

In his own recipe, Ali Mandhry, a cook from Mombasa, distinguishes mahamri, which uses yeast and puffs up until it is nearly hollow inside, from mandazi, which uses baking powder and has a dense interior. His formula includes milk and yogurt in addition to coconut cream. Versions that use only coconut-based liquids and versions that combine them with dairy products differ in the makeup of the dough.

He kneads the dough thoroughly, waits until it has increased in volume, rolls it out flat, cuts it into four and then fries it. He describes a pale band visible between the browned top and bottom as a sign of a good result. It is a method that pays attention to every stage, from rising and shaping to frying.

The line between mahamri and mandazi is not set by name alone

Depending on the source, mahamri and mandazi are either grouped together as fried breads of the same family or distinguished by their ingredients and leavening. The Smithsonian’s explanation treats them as a regional difference in naming. On the other hand, some cooks on the coast draw a clear distinction between the two.

How the two names are used differs by region and by cook. Maandazi, the plural of the Swahili word andazi, broadly refers to foods made by kneading flour or similar ingredients and frying them. Within that category, regarding the coastal fried bread made with coconut, cardamom and yeast as mahamri allows its characteristics to be compared concretely.

Some home versions made under the name mahamri use baking powder. In the formula Midori Daimon learned from a Kenyan woman, flour containing baking powder is combined with squeezed coconut milk, cardamom, butter, eggs and sugar. The dough is rested for about two hours, rolled into a round, cut into four and then fried. The woman says she learned how to make it at a restaurant in Nairobi, and that she was also taught the method using coconut milk and butter by Muslim friends. Not every mahamri can be distinguished solely by whether its leavening is yeast.

Frying mandazi in a pot (2014, location unknown).
