In recipes where dried coconut is toasted and combined with nuts, raisins, sesame seeds, cardamom and nutmeg, the fairly dry filling is cooled before it is wrapped.

Grated coconut. 2021; location unknown. If long fibers or large pieces of nut remain, they form bumps inside the thin shell. Chopping the filling finely and preparing it by grinding or toasting also affects the work of wrapping it in thin dough.

Working fat into the dough

The shell is often made with maida, a refined wheat flour. Ghee or another fat is worked into it first, and then the dough is brought together with water or milk. Rather than being made soft like a bread dough, it needs to be strong enough to roll into a circle and still bite cleanly after frying.

After the filling is placed on a round of dough, leaving an empty margin around it, the dough is folded in half. The edges are moistened to stick firmly together and sealed by gathering pleats or pressing them with a fork. The pattern is decorative, but it is also part of the sealing that keeps the filling from leaking out during frying.

Some versions layer the dough. In a home recipe for Goan neuri, thinly rolled dough is spread with a mixture of ghee and flour, rolled up, cut into pieces and rolled out again. When it is filled and fried, thin layers appear in what looked like a single continuous shell.

The Diwali sweets platter

In Maharashtra, karanji is one of the sweets prepared for Diwali. A faral platter, which combines sweets and savory snacks, holds sweets in many different shapes.

A Diwali sweets platter including karanji. Because the fillings vary widely and include reduced-milk fillings, pulses and coconut, they cannot all be treated as other names for the same ingredients.

There are also savory snacks with unsweetened fillings that go by the name karanji. In one example of Maharashtrian matar karanji, green peas are combined with coconut and spices, wrapped in dough and fried. The filling tastes different from that of sweet karanji made as a festive treat.

In Goa, there is a sweet called neuri, made for Diwali and the Ganesh festival. It is also popular as a Christmas sweet, and in 2022, women in Goa brought neuri filled with coconut and semolina to a market for homemade sweets. Among the half-moon sweets of different regions, the name karanji is associated with Maharashtrian homes and festive tables.

One cook with roots in Goa remembers making neuri for the first time with her younger brother and sister at Christmas when she was 16. Mixing candied fruit into the coconut filling is her mother-in-law’s touch.

Glossary

Maida: The name for refined wheat flour used in India and elsewhere.

Ghee: Milk fat with the water and milk solids removed.

Jaggery: A general term for sugar made by boiling down the sap of sugarcane or palms.

Gujiya: A sweet popular in North India, made by wrapping a sweet filling in thin dough.
