The white liquid is left to stand for a while, and the clear liquid on top is removed, leaving the settled portion. This thick extract is cooked with water and sugar while being stirred, and ghee is added little by little. In another household recipe, part of the sugar is caramelized for color, the remaining sugar and water are added, and then the wheat extract is mixed in. Once the mixture thickens and begins to pull away from the sides of the pot, roasted cashews are added.

An example of ghee. The starch absorbs water and becomes viscous when heated, and over long stirring the sweet takes on a sheen. Adding ghee makes the mixture easier to stir and also contributes the aroma of milk fat. At Lakshmi Vilas, a sweet shop in the town, the white liquid pressed from wheat is left to rest, then stirred continuously with ghee and sugar in a large pot heated over firewood. The artisans take a small amount on their fingertips to check the firmness and transfer the halwa out of the pot once the ghee rises to the surface.

Memories of the Shops and the Town

The shop’s family hands down a story that an ancestor, a cook from North India, moved to this area and began selling wheat halwa. Other shops have their own histories, and the origin of the sweet as a whole cannot be determined from the memories of a single family.

Another shop, Iruttu Kadai, is known by a name meaning “dim shop.” A writer born in the town recalls going to the temple in the evening as a child and buying a small portion of halwa on the way home. As an adult, the writer says, they talked with friends over warm halwa served on banana leaves.

There is also a local saying that the water of the river flowing through the town determines the flavor. The link between the water and the flavor has not been proven; it is a story that conveys local affection for the town’s sweet.

Glossary

Iruttu Kadai: The name of a halwa shop in Tirunelveli.
