Coconut contributes aroma and fat, and jaggery gives a flavor different from that of white sugar. Once the mixture is thoroughly cooked, transferred to a plate and cooled, a liquid batter loose enough to scoop with a spoon becomes firm enough to cut.

Household variations in grain, and festival preparations

In Karnataka, haalbai is made at home for festivals and celebrations. Some households vary the ingredients, for example by using millet instead of rice. In another method, wheat is soaked overnight and ground, and the strained liquid is cooked down with jaggery, spread on a plate and left to cool. Sweets made with coconut milk do not keep long, and some shops make them to order.

Different ingredients produce yet another mouthfeel. For ragi manni, presented as a home-style dish from Mangalore, soaked finger millet is ground with water and strained, and the liquid is cooked with coconut milk and jaggery. Ghee is added a little at a time, and once the mixture turns glossy, it is spread in a mold and cut into diamonds after it has cooled.

Records of South Canara cooking also describe making haalbai and leaf-wrapped steamed sweets for Naga Panchami, a festival honoring the serpent deity. The cooked mixture is sometimes spread on banana leaves to cool instead of on a greased plate.

Glossary

Finger millet (ragi): A small-grained millet.
