Some cooks use the back of a fork if they do not have a dedicated mold. The pieces are fried in oil, then tossed in boiled-down jaggery syrup to coat the surface. The syrup tends to collect in the grooves and hollows.

An example of unsifted wheat flour. If it is too thin, the shells turn soggy; if it is boiled down too far, it tends to form a thick, hard coating. The cook judges the consistency at which the sugar coats the pieces all over while the fried wheat dough keeps its texture.

Ramya, a culinary expert from Andhra, writes of having eaten these jaggery-coated shell sweets at Diwali since childhood. In Ramya’s family, the taste of jaggery was a familiar one. To judge when the syrup is ready, a drop of it is placed in water; it should be thick enough to be rolled into a ball with the fingers.

Some gavvalu with the same shell shape are not sweet. One family makes gavvalu with chili and sesame, using a grooved wooden mold handed down from a maternal great-grandmother. This snack uses the same shaping tool as the sweet-coated version.

In Telugu, bellam means jaggery and gavvalu means shells. Some households use white-sugar syrup instead, and the choice of sweetener is reflected in both the name and the taste. It is also a sweet that families shape one piece at a time for festivals.

Glossary

Jaggery: A non-centrifugal sugar made by boiling down sugarcane juice or palm sap.

Glaze: A coating of sugar or another sweet liquid on the surface of a sweet.

Ramya: A culinary expert from Andhra who shares festival sweets made at home.

Bellam gavvalu is a shell-shaped fried sweet from the Andhra region.
