In some examples, salt and pepper are added to the egg, so sweet and savory flavors coexist in a single bite. Soaking the saffron in rose water first spreads its color and aroma throughout the noodles.

The Jamal Bin Huwaireb Studies Centre, which introduces Gulf food culture, describes balaleet as a dish served not only for everyday breakfast but also on holidays and at the pre-dawn meal during Ramadan. In the Centre’s description, the noodles are boiled and drained, then mixed with sugar, saffron, cardamom, cinnamon, and butter or ghee, and topped with egg. There are methods that toast the noodles before boiling them, and methods that add aroma to noodles after boiling.

On the Tables of Families and Workers

A Ramadan record from Qatar’s Ministry of Culture describes families eating balaleet, thin noodles served with egg, and other dishes together before dawn on the first day of the fast. After the meal, they pray and then each head off to work; it is a morning dish.

There is also a recollection that in the old neighborhoods of Bahrain, people working in construction gathered around this dish during their morning break. They reportedly ate homemade noodles, sometimes with egg and sometimes plain, along with tea or coffee.

It is a dish often eaten warm for breakfast or on celebratory mornings. In Gulf kitchens, where thin noodles are used in both meals and sweets, the pairing with a topping of egg is what makes balaleet stand out.

Glossary

Vermicelli: Thin noodles made from wheat flour or other ingredients.
