Fios de ovos and ovos moles mixed with gila jam are layered in the center of the dough, and the surrounding dough is pulled up to enclose them.

Fios de ovos is a thread-like sweet made by pouring egg yolk in thin streams into sugar syrup, where it sets. Ovos moles is a soft cream made by cooking egg yolks with sugar. Gila jam is made from the fibrous flesh of a squash. In one example from a Portuguese culinary source, the egg-yolk threads, ovos moles and gila are layered and enclosed in the surrounding dough, which is then placed on a floured baking sheet and baked. The flour helps with handling the dough and moving it onto the baking sheet. In another method, chocolate is added to the outer dough to give it a color resembling corn bread.

Served with sweet olives

Not only the bread but also its accompaniments are made to look like something else. At celebrations, sweet olives and sausages made from the same almond dough are sometimes set out. A Portuguese resource on traditional foods calls the combination of pão de rala with a dish of sweet olives, a sweet sausage and a sweet called queijinho do céu a “merenda.” They look like bread and savory foods, but when eaten, they fill the mouth with the sweetness of egg and almond.

Stories told and records left behind

According to an origin story, when King Sebastian visited a convent, the nuns offered him this sweet while saying, “We have nothing but coarse bread, olives and water.” The tale is cherished as an explanation for the surprising appearance of this local sweet, but the king’s visit does not prove how the sweet came into being.

A manuscript long regarded as a 1729 recipe collection of the Convent of Santa Clara mentions pão de rala by name and states that the recipe was passed on from another convent. However, recent research has raised doubts about how the manuscript came to be written and about the authenticity of its contents. Further examination is needed before the transmission between convents or the origin of the sweet can be treated as established historical fact.

In 2026, the city of Évora announced that it had registered a “Pão de Rala Évora” design to convey the connection between the sweet’s name and the place. The city has also presented a plan to work with local food culture organizations to advance certification of the sweet.

Glossary

Espécie: The dough of almonds, sugar, egg yolks and other ingredients that forms the outside of pão de rala.

Fios de ovos: A thread-like sweet made by pouring egg yolk in thin streams and cooking it in sugar syrup.

Ovos moles: A soft, cream-like sweet made from egg yolks and sugar.

Gila: A type of squash with fibrous flesh.
