The area covers not only the city of Poznań but also designated areas of the surrounding Greater Poland (Wielkopolska) Voivodeship. The specification at the time of registration set the weight at 200–250 grams per pastry, but an amendment in 2013 lowered the minimum to 150 grams. Shop ingredient labels list white poppy seeds, orange peel, almond flavoring and more, and the use of such ingredients is what distinguishes it from other crescent-shaped breads.

Newspaper advertisements and legend

The historical account in the product specification states that an 1860 advertisement in a Poznań newspaper mentioned St. Martin by name, and that rogale were sold both with and without filling. According to the same document, after the Second World War, during a period when ingredients were hard to obtain, white poppy seeds came to be used in place of almond filling. Today’s filling cannot simply be assumed to be the same as that of the 19th-century pastry.

On November 11, St. Martin’s Day, the pastry is sold throughout Poznań. According to one legend, its shape represents a horseshoe lost by the saint’s horse, but this legend is kept distinct from records that prove the origin of the shape.

Glossary

St. Martin: The saint associated with the November 11 feast day and with the lore of this pastry.

White poppy seeds: Pale-colored poppy seeds.
