Desserts / Moldavia region, Romania

Alivenci is a baked dish of cornmeal and dairy products, popular in the Moldavia region of Romania. It has a soft interior and a browned surface. Sweet versions are served as dessert, while savory versions can also be eaten as a meal.
Baking cornmeal and cheese together
Cornmeal is combined with milk or fermented milk, fresh cheese and eggs, and baked. In some versions, the cornmeal is first warmed in milk and allowed to cool before the eggs and cheese are mixed in. Not adding the eggs while the mixture is still hot makes it easier to achieve an even batter. Some people also serve the baked dish with sour cream or butter.

The cornmeal absorbs the liquid from the dairy, giving the batter body. The cheese adds a milky flavor. Because this is not a dessert made by layering thin pastry sheets, but one in which the ingredients are baked together, the inside holds together moistly when cut. The amount of sugar and the saltiness of the cheese vary with the recipe.
Versions with herbs, versions served sweet
In Moldova, there is also a method in which the batter is placed on horseradish or cabbage leaves when baking in a wood-fired oven. Savory versions mix sheep’s or cow’s milk cheese with green onions and herbs, while sweet versions use fresh cow’s milk cheese. The top is baked until golden, and the dish is served with sour cream or fermented milk. The local dishes that combine dairy and grains include not only sweet desserts but also savory dishes.
In the method of Cezarina Avădanei, introduced in Romania’s Neamț region, cornmeal and raisins are soaked in fermented milk and combined with two kinds of cheese, eggs, and dill or green onions. After baking, the dish is spread with sour cream and honey. It is an example that combines herbs and raisins and is finished sweet with honey.

Romanian food culture sources note that a recipe under this name also appears in a cookbook from 1871. It combines fresh cheese with cornmeal and eggs, showing ingredients that connect to today’s varied home cooking.
The singular form is alivancă, and the plural is alivenci. The name is tied to the tables of Moldavia and Bukovina, and this regional dish moves back and forth across the line between dessert and meal.
