Careers
Now Hiring: Kitchen Staff (Pâtissier, Sales Staff)

We want to offer not only “sweets for special days,”
but also “sweets for everyday life”
that quietly enrich an ordinary day

Fushimi-Momoyama, Kyoto. Known as a sake-brewing town, it is a sightseeing destination that is also a place where everyday life is very much alive. Cafe & Sweets Parade Kyoto aims to be a “patisserie that is part of everyday life” for the people who live in, work in and visit this town.

Cafe & Sweets Parade Kyoto is located a short distance away from the bustle of the Otesuji Shopping Street in Fushimi, Kyoto.
So that you can taste the goodness of each seasons flavorful ingredients as fully as possible we make our sweets as simply as we can without excessive handling

As a small treat for yourself, at the family dinner table, during a break from work, or as a gift chosen with someone in mind. We believe that sweets quietly stay close not only to life’s special moments but also to ordinary everyday life.

The moment at the end of a busy day when you can finally relax, or a situation in which you entrust feelings you cannot fully put into words: when sweets are part of each of those moments, hearts soften a little, conversations begin, and the time turns into a lasting memory. At Cafe & Sweets Parade Kyoto, we approach our confectionery every day hoping to be a presence that can gently support those small moments of happiness born through sweets.

Parade’s sweets are born from “dialogue” among our staff

At Cafe & Sweets Parade Kyoto, out of our wish to offer delicious sweets that put no strain on the body even if eaten every day, we make our sweets relying on additives as little as possible and valuing the strength of the ingredients themselves. We choose our ingredients by looking not only at their flavor but also at their background and the approach of their producers, and above all we value customers being able to pick them up with peace of mind. Our starting point is offering sweets that are gentle on the body, that fit naturally into daily life, and that make you want to eat them again and again.

One of our shop’s signatures is the “Financier with the Aroma of Brown Butter.” The aroma of the butter, the baked color, the texture: each of these greatly affects the result, so although it looks simple, there is a clear reason behind every step, from selecting the ingredients to the formula and the baking. Because the slightest difference in temperature or time changes its character, in our daily preparation we work on it while valuing experience in both intuition and theory.

This financier was also not perfected through the senses of a single pâtissier alone. Through daily preparation and baking, each staff member has brought the small things that felt off and the insights they noticed, and we have talked them through and exchanged opinions, gradually refining the recette.

Making sweets is dialogue and technique, and the accumulation of that experience. Here you will find an environment where, while valuing that process, we can keep searching as a team for a flavor we feel is “truly Parade.”

A culture that values taking on challenges while respecting each other’s individuality

Each staff member has their own individuality and strengths, and we are a team that works with mutual respect. Regardless of age or years of experience, ideas such as “this would be even better if we did it this way” are welcome.

Especially in product development, we have a culture of repeating trials and improvements while sharing opinions as equals, facing each other’s feelings, and valuing relationships in which we can support one another. It is an environment where you can contribute using your own perspective and sensibility, rather than simply carrying out assigned tasks.

Also, regardless of seniority or position, ideas such as “this would be even better if we did it this way” are shared on an equal footing. Especially in product development, we come up with ideas, try them, fail, and think again. We have the groundwork to put that process into practice as a team. It is not a job of tracing the correct answer, but one in which you can take part with your own perspective.

・In-store production and sales
・Product planning and development
・Events and pop-up stalls
・Planning and production of OEM (commercial and corporate) confectionery

・Collaborations with the local community and other industries

Work at Parade does not stay within the shop. Going beyond the framework of a “patisserie,” you will have opportunities to think about to whom, and how, to deliver sweets in a variety of situations. Experience on the job offers opportunities to broaden your experience beyond simply making sweets.

Production is almost entirely done by hand. To keep the baked goods consistent in appearance, we check them by relying on that day’s temperature, humidity, baking timing and our senses. We have prioritized “how can we deliver this in the most delicious and pleasant way” over efficiency.

First, you learn the basic recipes and gradually expand what you can do. You may be involved in product development, production, packaging, inventory management, and sometimes even customer service, but

what all of the work has in common is imagining, “What kind of time will the person who picks up this sweet spend?” How can we make it even more delicious? What ingenuity is needed to maintain quality? It is a job of exploring while working with sweets every day.”

The kind of people we would like to work with

・People who relate to building a shop rooted in the town
・People who relate to the world and philosophy of Cafe & Sweets Parade Kyoto
・People who love sweets and have a spirit of inquiry
・People who enjoy thinking and experimenting as a team
・People who want to bring their individuality to their work

We value your attitude toward sweets and people more than whether or not you have experience.

We believe that making a living through sweets is not an easy path.
We, too, know how difficult it is to make that dream come true.
But if you are serious about pursuing the path of a pâtissier, your time here will surely help you grow.

People who want to pursue their dream wholeheartedly.
People who want to put their skills to work in the world of sweets for a long time and in depth.

We sincerely hope to meet someone like you.

If you are even a little interested, please visit our shop at least once.
We are sure you will be able to feel the atmosphere and warmth that we value.

The sweets made with liquor are the Galette Bretonne (with rum) in the L box and the Madeleine Chocolat (with liqueur) in the M box. For full details, please see the list of gift boxes.

What kinds of honey, eggs and chocolate do you use?

The ingredients we use vary by product. Our main ingredients are as follows.
• Honey: Purely Japanese honey from Higuchi Apiary in Fushimi, Kyoto (Honey Madeleine, Caramelized Honey Canelé, etc.)
• Eggs: “Sakura” eggs from purely Japanese-bred hens (Oven-Baked Cream Puff, Canelé de Bordeaux, Honey Madeleine, etc.)
• Chocolate: Chocolate from Valrhona of France (Madeleine Chocolat, etc.)
• Butter: Cultured butter (Brown Butter Financier, Galette Bretonne, etc.)
Please check each product page for that product’s ingredients.

Is there an ideal temperature or way to warm the sweets so they taste their best?

Depending on the product, there are recommended ways to enjoy it.
• Canelé de Bordeaux: Warming it for 3–5 minutes in a toaster oven that has not been preheated makes the caramel on the surface crisp, giving it a texture close to freshly baked.
• Brown Butter Financier: Warming it in a toaster oven for about 1–2 minutes gives it a texture and aroma close to freshly baked.
• Linzer Torte: The ideal serving temperature is 5–20°C.
• Lemon Cake (with icing): We recommend letting it sit at room temperature for a little while to enjoy the fluffy texture of the cake, or, in summer, enjoying it chilled straight from the refrigerator.
Toaster ovens heat differently depending on the model, so please keep an eye on the sweets while warming them to avoid burning.

How many people do Size 4, Size 5 and Size 6 whole cakes serve?

Parade’s “Decoration Cake with Fresh Cream and Seasonal Fruit” serves approximately 3–4 people in Size 4, 4–6 people in Size 5 and 6–7 people in Size 6. Please choose a size based on how much will be eaten and whether it will be served together with other sweets.

How long can I carry a cake? Do I need ice packs or an insulated bag?

Please plan on carrying it for about 1 hour. Conditions vary depending on the temperature, the type of cake and how you travel, so if you are planning a long journey, please consult the shop before purchase.

Can I have a message plate or candles added to a birthday cake?

The “Decoration Cake with Fresh Cream and Seasonal Fruit” comes with an original cookie plate and 1 set of 5 candles. A charge applies to candles from the 2nd set onward.

Are the sweets for sharing at work individually wrapped? How many people can a gift serve?

The Classic Baked Goods Gift is an assortment of sweets packed in individual bags. Note, however, that “9 items” does not mean 9 pieces: some items, such as the sablés, contain several pieces in one bag. Please think separately about how many people you are giving to and how many bags you want to give each person.

What is the difference between a financier and a madeleine?

Generally, a financier is characterized by the flavors of egg whites, almonds, and browned butter, while a madeleine is typically based on a batter made with whole eggs. At Cafe & Sweets Parade Kyoto, we offer the Brown Butter Financier and a madeleine made with rice flour and honey.

Do canelés taste better warmed? How do you recommend eating them?

If you warm Parade’s Canelé de Bordeaux for about 3 to 5 minutes in a toaster oven that has not been preheated, the caramel on the surface becomes crisp, and you can enjoy a texture and aroma close to freshly baked. Because heating varies by model, please keep an eye on it while it warms.

Can cakes and baked goods be frozen?

Because ingredients and finishing differ from product to product, we do not state that all cakes and baked goods can be frozen under the same conditions. Please first check each product’s storage instructions and date label. If you plan to freeze a product, please consult the shop before purchasing and tell us the product name.

What is the difference between sablés, cookies and galettes?

“Cookie” is a name for a wide range of baked goods. “Sablé” is used as a name describing a texture that crumbles softly like sand, and “galette” is used for sweets with a flat shape, among other things. Parade’s Galette Bretonne is a thick-baked cookie made with butter.

Can I get paper bags, small bags for sharing or gift wrapping?

In store, paper bags, plastic bags, bags for baked goods and gift wrapping are available for a fee. Prices vary by type and size. Please let us know how many you need and any wrapping requests before purchase.
