Ingredients and Preparation of Chhena Gaja
Fried Sweets / Odisha, India

Chhena gaja is a sweet from the state of Odisha in which milk solids are kneaded, shaped, and combined with sweet syrup. Pieces that are fried before being soaked in syrup are browned on the outside, while the dough keeps the flavour of milk along with its sweetness.

Kneading Milk Solids and Soaking Them in Syrup
Chhena is made by curdling warmed milk with acid or similar agents and draining off the liquid. In one example from a university cooking textbook, the chhena is crumbled, semolina is added, and the mixture is kneaded until smooth. It is divided into small portions, shaped from discs into squares, and fried over low to medium heat. The fried pieces are transferred to sugar syrup, left to soak for a while, then lifted out and served.
The key technique in this recipe is adding semolina to bind the dough so that it holds its shape while frying. Among similar milk sweets, some chhena jhili is rolled into small balls, while in rasabali, flat fried dough is soaked in reduced milk. Even when the ingredients are similar, the flavour changes depending on the shape and the liquid used to finish the sweet.
Pahala’s Sweet Shops and Household Forms
At the sweet market in Pahala, Odisha, chhena gaja is displayed alongside rasgola, round balls cooked in syrup, and the baked sweet chhena poda. One visitor saw fried gaja soaking up syrup in a large pot behind a shop.

Another description also mentions a version in which shaped chhena is cooked in thick syrup and dried so that sugar crystallises on the surface. Some household recipes add wheat flour to the chhena, form it into rectangles, and cook it in syrup without frying. The dough, which puffs up as it cooks, is cooled and flavoured with rose water. There are square and elongated versions, and different results come from the same chhena.
