Ingredients and Preparation of Makkan Peda
Fried Sweets / Arcot, Tamil Nadu, India

Makkan peda is a filled, fried milk sweet from Arcot in Tamil Nadu. When the golden-fried dough is soaked in syrup, you can feel the crunch of nuts and seeds inside the soft dough.
According to the Ranipet district’s description, unsweetened reduced milk is mixed with refined wheat flour and rolled into lemon-sized balls. Dried fruit is stuffed inside, the balls are shaped, and they are fried in oil until golden. They are then soaked in sugar syrup for at least 10 hours so that they fully absorb the sweetness.
In the method of Moti Krishnan, a cook who grew up in Arcot, khoya is mixed with ghee and yogurt, and wheat flour is added. The dough is brought together without vigorous kneading, wrapped around the filling, flattened slightly, fried and soaked in saffron-infused syrup. In this method, the soaking time is 30 minutes or more. Compared with the long soaking described by the district, this shows that the finishing varies from one maker to another.

The milk solids in the dough provide richness, and the wheat flour supports the shape that encloses the filling. The fillings listed by the district include cashews, raisins, and pumpkin and cucumber seeds. Depending on the size and combination of the pieces, different textures emerge inside the sweet, soft shell.
According to the district’s description, its flavor also resembles syrup-soaked gulab jamun. Arcot’s makkan peda is a sweet in which the filling placed at the center lets you enjoy contrasting textures in a single bite. On the other hand, some cooks note that there are also versions without filling.
A sweet shop in Arcot hands down a story that the owner’s ancestor ate a sweet once served at the royal court and, through repeated refinement, made it into the shop’s own sweet. It is an interesting memory that conveys the shop’s history, but it has not been verified as a contemporary record substantiating the sweet’s origin.
