Our Mont Blanc pie layers a marron paste made from carefully sieved Japanese chestnuts over our homemade pie pastry and homemade crème d’amande. The rich flavor of chestnut, with a light scent of rum, comes together with the toasty pastry and the nutty depth of the almond cream.
The pumpkin terrine brûlée is finished with a smooth texture and carries subtle notes of cream cheese and of Taiwanese Mi Xiang (honey-scented) black tea honey. Cacao nibs scattered on top add a slight bitterness and a textural accent to its gentle sweetness.
The Shine Muscat panna cotta pairs a clean-tasting vanilla panna cotta with a juicy kirsch jelly and in-season Shine Muscat grapes. Its refreshing finish offers a contrast to the rich flavors of the chestnut and pumpkin.
To go with the dessert plate, we have prepared kuki hojicha (roasted stem tea) from “Baisa Nakamura”. When our pâtissier visited this tea shop in Uji, the kuki hojicha they tasted there was so delicious that we chose it specifically to pair with this plate. It is a tea made from stems and leaf veins sorted out from premium matcha, gyokuro and other teas, which the tea master carefully blends and roasts, mainly in the shop. The refined roasted aroma, depth and subtle sweetness that come from such high-quality ingredients complement the autumn desserts.
Please take your time and enjoy an autumn moment, tasting a little of each of the three desserts alongside the fragrant kuki hojicha.
