Ingredients and Preparation of Prekmurska Gibanica
Pies / Prekmurje, Slovenia

Prekmurska gibanica is a layered pastry from Prekmurje in northeastern Slovenia. Four fillings—poppy seeds, fresh cheese, walnuts and apples—are each layered twice, separated by thin sheets of pastry, and then baked. The cut surface reveals black, white, brown and pale fruit layers.

Four Fillings, Layered Twice
In one example, thin phyllo dough is laid over a base crust, and the poppy seed filling is spread on first. The cheese, walnut and apple fillings follow in that order, each separated by a sheet of dough, and the same sequence is then repeated once more. Cream or fat is drizzled over each layer. Because the thin sheets separate the fillings, the flavor and color of each layer remain distinct even after baking.
In the method for the protected name presented by the Slovenian government, a crisp pastry is used for the base, and the fillings above it are separated by thinly stretched dough. The top sheet is either covered with cream mixed with egg yolk or brushed with fat.
You can enjoy, in alternation, the aroma of the poppy seeds and walnut pieces, the milky flavor of the cheese and the tartness of the apples. Because preparing so many layers takes considerable effort, it has also long been cherished locally as a celebration pastry. Each slice is thick because the four fillings are repeated twice.

Regional Celebrations and Protecting a Tradition
The specification for Slovenia’s protected name cites an 1828 description of local life by Jožef Košič. It describes gibanica as indispensable at wedding feasts, made by layering ingredients such as chopped cabbage, turnips and fresh cheese on thin dough, baking it and cutting it into triangles. The combinations of vegetables and cheese described there differ from today’s four sweet fillings.
In 2010, the name was registered as an EU “Traditional Speciality Guaranteed.” This scheme protects traditional production methods and ingredients, and it works differently from geographical indications, which restrict production to a designated area.
An organization that preserves Prekmurje’s food culture holds a festival of local dry-cured ham and gibanica in Murska Sobota, with tastings and demonstrations of how it is made. Methods handed down in households are also presented at these gatherings.
