Fermented Pastries / Slovakia, Skalica

Skalica trdelník (Skalický trdelník) is a tube-shaped baked pastry made in and around Skalica in western Slovakia. Leavened dough is wound around a rod and turned over the heat. Once it has browned, the rod is pulled out, leaving a tube with a hollow center.
Wound around a rod and baked
The dough is made with wheat flour, eggs, yeast, milk and other ingredients. The soft, risen dough is wound around a rod called a “trdlo,” brushed with whipped egg white and coated with chopped walnuts, almonds or similar nuts. The rod is turned, and the pastry is brushed with fat from time to time as it bakes to a golden color in radiant heat. After the rod is removed, vanilla-flavored sugar is sprinkled over it.
On the outside, the nuts are toasty and fragrant, while soft dough remains on the inside. The pastry has an inner diameter of several centimeters, and when it is cut, you can see the hollow center and the shape of the dough that was wound around the rod.

The town’s pastry and its protected name
According to the geographical indication registration documents, by the late 19th and early 20th centuries it had also come to be sold at festival fairs. Skalica still holds a festival of the pastry today, where visitors taste and compare the makers’ products or take part in baking it themselves.
Products bearing the Skalica name are registered as an EU geographical indication. The production area extends beyond the town of Skalica itself to a surrounding zone bounded by rivers and the national border. Similar tube-shaped pastries are found throughout Central Europe, but this name is tied to a defined area and production method.
Locally, there is also a legend that the recipe was passed down from the cook of Count Gvadányi, who lived in Skalica. The registration documents present this as oral tradition, and among the surviving written records they cite items such as a manuscript by the early 20th-century poet Juhász. This pastry, wound on a tube and baked, carries both the stories handed down in the town and the records written down later.
