Multifloral Honey, Shaped by Flowers, Land, and Climate
Multifloral honey is gathered not from a single type of flower, but from the many different flowers that bloom in a given season. Where was it harvested? When, and which flowers were in bloom? That year’s temperatures and rainfall, the condition of the bees, the timing of the harvest. Many factors come together, and its color, aroma, and flavor all change.

Some time ago, we visited Higuchi Bee Farm and heard from Higuchi-san about beekeeping and honey harvesting. What left the strongest impression on us was that honey is a product of nature born from the combination of “flowers, land, climate, and the work of bees,” and that no two years ever produce the same honey. While watching the condition of the bees and the changes of the seasons, Higuchi-san bottles the honey produced in that particular year and that particular place. It is not a uniformly made flavor, but a flavor that can only be harvested at that moment. In a single spoonful of honey, you can sense the season in which it was made.

The honey we pack in this gift box is multifloral honey harvested at Kyoto Higuchi Bee Farm in spring 2026.
According to Higuchi-san, the character of chestnut honey came through strongly this year, giving it a flavor reminiscent of the “Early Summer Multifloral Honey” that the farm sells every year. After a rich sweetness, the toasty notes characteristic of chestnut honey, along with a slight bitterness and astringency, linger slowly. Unlike lighter honeys, it has a deep flavor that is more than just sweet. This bitterness and astringency are also an important part of its character, left by that year’s flowers and climate, making this a precious honey that can only be enjoyed now.
It goes well not only with toast and yogurt, but also with cheese, nuts, and black tea. It also suits a small evening dish. From breakfast to teatime to the end of the day, you can enjoy a jar of honey little by little in your daily life.
*This product contains honey. Do not give it to infants under 1 year of age.
