Cœur Blanc

Cœur Blanc is a classic no-bake cheesecake from Cafe & Sweets Parade Kyoto, a pastry shop in Fushimi-Momoyama, Kyoto.

“Cœur Blanc” means “white heart” in French. The name comes from how the cake is made: vivid raspberry (framboise) is quietly tucked inside a calm, white no-bake cheesecake.

Made without any eggs or gelatin, it relies on the natural richness of cheese and dairy for a smooth texture that gently melts away. Your fork slips in softly, and in your mouth it slowly melts as it warms to your body temperature, releasing the mellow richness and gentle tartness of the cheesecake.

Instead of focusing only on richness, the cake stays light right through to the aftertaste. In the first bite, you taste the milky flavor of the cheese and the gentle sweetness of honey. Then the sweet-tart raspberry appears from inside. Its vivid, fruity acidity gives definition to the mellow cheesecake and sharpens the flavor with every bite. White cheesecake and red raspberry: the contrast between soft sweetness and bright acidity, and not only between the colors, is an essential part of this cake’s appeal.
